The sauce is great on ribs, or with pulled pork or smoked beef brisket. It’s versatile. The sauce flatters the meat without overpowering the natural flavors. When Hubby and I were planning our Meal Menu recently, I had suggested barbecued chicken. It’s something we haven’t had in – oh, a year at least. Hubby suggested as long as we were grilling up boneless chicken, why not mop on the old family recipe for Golden Eagle Sauce? Sounded like a win-win to me.
I made the sauce and the sides, Hubby was in charge of the chicken. When it came time to eat, kiddo came to the table and his face lit up. “Eagle Sauce!” he exclaimed with his first bite of chicken. I was proud of him, that he recognized the sauce right away. And I realized, we need to keep a bottle made up in the fridge for whenever we want that sassy sauce on whatever – from hot dogs to burgers and just about anything.
Barbecue Chicken with Golden Eagle Sauce
Golden Eagle Sauce
1 bottle (32 oz) Hunts Ketchup
3 tablespoons Dry Mustard
2 teaspoons Black Pepper
1 tablespoons Worcestershire Sauce
1/2 cup Cider Vinegar
1/2 cup Water
1 tablespoon Chili Sauce
1/2 tablespoon Liquid Smoke
To make the sauce, combine all ingredients in a heavy sauce pan. Stir and bring to a boil. Reduce heat, cover and simmer 10 minutes. Remove from heat, let “steep” until ready to use – the longer the better. Use as desired.
Refrigerate any unused sauce. (The empty Ketchup bottle works well, just be sure to label it “Barbecue Sauce” so no one gets a surprise on their burgers or French fries).
Barbecue Chicken
6 boneless Chicken Thighs
Vegetable Oil as needed
Heat grill to medium heat. Oil grate with vegetable oil to prevent chicken from sticking. Place meat on the hot grill and cook 8 minutes. Turn and cook an additional 8 minutes.
Mop chicken well with sauce. Grill 2 or 3 minutes longer. Turn, mop and grill another 2 or 3 minutes.
Pull chicken, serve with additional sauce as desired.
This chicken is great with Pan-Fried Potatoes and sweet buttery corn.
