Amazing Two-Sauce Italian Butterfly Pasta

Welcome to National Pasta Day. Did you know that not only is October 17th a day revered by Pasta Lovers everywhere, but the entire month of October is dedicated to pasta? If you were to eat a different type of pasta for each day of the month, you still wouldn’t have eaten your way through all the pastas out there.

In the long and medium-length pasta category alone, there are 38 different pastas. Of the short pasta variety, there are nearly twice as many. That doesn’t even take into consideration the stretched pastas such as Corzetti or Orecchiette or the pastas found in soups such as Orzo. There are easily over 150 different types of pastas in the world, and most of those are associated with Italian cooking.

The first reference to pasta dates back to 1154 in Sicily. The first English mention of Pasta wasn’t until 1874, so it’s no wonder the Italians had cornered the market on Pasta creations. Pasta can be found in everything from Appetizers (think Pasta Amnesia) to desserts. Personally, I’ve never tried a dessert ravioli, but I’d imagine they are delicious.

Wait till you try this creamy pasta dish that utilizes two different sauces. When I first read the recipe, I thought it must be a mistake. A Garlic Tomato Pasta Sauce and a Garlic Alfredo Sauce combined in a single dish. The garlic alone would be over the top. Yeah, but in a good way. My guys loved it. Hope you will, too.

Two-Sauce Italian Butterfly Pasta
16 oz Farfalle Pasta
1/4 cup Red Onion
1 lb Italian sausage
1 tablespoon Roasted Minced Garlic
Red Pepper Flakes to taste
1 (15 oz) jar Garlic Alfredo Sauce
1 (24 oz) jar Garlic Tomato Pasta Sauce
1 cup Mozzarella, shredded

Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente.

Chop red onion. In a large skillet over medium-high heat, brown sausage with onion, garlic and red pepper flakes. Drain and return to skillet.

Turn heat down to medium. Stir in spaghetti sauce. Bring to a simmer, and allow to simmer for about 5 minutes. Add Alfredo and stir to combine.

Add pasta to skillet. Stir to coat in sauce. Remove from heat, sprinkle mozzarella on top. Cover skillet to allow cheese to melt.

Serve with a toss salad and warm bread for a simple yet delicious supper. Perfect with either a red or white wine.
