Slow-Cooker Shredded Chicken Tostadas

What is a Tostada? I ask because I really didn’t know. Well, I knew but I didn’t know – does that make sense? It’s like listening to someone speak in your native language – the brain understands without thinking. You Know What They Say

And we’ll get to that in a minutes. When putting the final touches on our week’s Meal Menu Plan recently, I noticed that I had scheduled Short Ribs at the beginning of the week, with Country Pork Ribs later that same week. I asked Hubby which he would prefer, since I don’t like to cook similar dishes in the same week. Just as I try to avoid two days in a row of chicken or beef. Variety is important.

Blessed Be the Feast of the Holy Cross

Today is the Feast of the Triumph of the Holy Cross. One would think, by the very name of this Feast Day alone, that it must be a Holy Day of Obligation – a day Catholics are required to attend Mass. While encouraged to pray daily and attend Mass as much as possible, only certain days are days of Obligation.
