Back before Hubby, Kiddo and I relocated to Stanislaus County, get togethers with family were just a little easier. Not that the distance has reduced our time with extended family, but rather complicated the pot luck aspect since transporting food around the corner was a whole lot easier than taking it for an hour-long drive through the country. Space is another consideration. Making multiple trips around the corner were doable. Not so now. Planning must incorporate certain limitations and require some creative thinking.

Easy Shrimp and Broccoli Stir-Fry
We haven’t had anything Stir-Fried in a while, have we? Stir-fry is always a hit in our house. While stir-fry isn’t complicated, it can involve a ton of prep work. What I’ve found that works best is to read through the recipe completely, gather the ingredients, measure everything out into little whiskey-shot size bowls and line it all up. That was when it comes time to stir-fry, everything is ready and at my finger tips.
Ginger Ale Fish and Shrimp Fry
Whenever we are traveling and want to grab a quick “fast-food” bite that isn’t the usual burger, Long Johns is always a popular choice. Hubby loves their golden fried fish, plump fried shrimp and a basket of French Fries. With enough Malt Vinegar, even Kiddo doesn’t mind a piece of deep-fried fish.

It’s coming to an end – all this talk of Lenten Season. Three Sundays from today and we’ll be wearing our Easter Bonnets! (Oh how I miss those days when we really did prance about in our Sunday Best complete with a beautiful new hat. Hum, I wonder – is that why I am fond of wearing hats? A new hat and new shoes were a part of Easter when I was young).

General Tso’s Glazed Shrimp over Broccoli
General Tso’s most famous dish is made with chicken. The name General Tso is said to honor the Qing dynasty statesman and military leader, Zou Zongtang, also known as Tos Tsung-t’ang. There is no actual record connecting him to a dish that was popular in Hunan, Zou’s home province. While the chicken variety of this dish has been associated with Tos Tsung-t’ang, there are other stories. Like most food folklore, we might never know. One thing is certain, this dish is equally amazing with shrimp as we all know there’s more to life than just Chinese Chicken.

For Valentine’s Day a few years back, I wanted something “romantic” for supper. At the same time, it had to be something simple that my guys could whip up with very little supervision. I had been ill, and cooking was just not in the cards. It’s times like this that I am grateful for processed foods that can easily come to the rescue. Start with something from a box in the freezer section of your supermarket, add a few fresh ingredients and there you have it – Super Easy Scampi. Yum! This “cheaters” Shrimp Scampi is colorful, unbelievably delicious and can be gracing the table in about 20 minutes.

Served along side warm garlic bread and a simple salad of leafy-lettuce with tomatoes, this makes for one romantic supper or impressive meal when company comes a calling. I love pasta dishes for entertaining. Maybe that’s just the romantic in me – imagine a table set in the middle of a vineyard – friends gathered round just as the sun begins to set. In the twilight of the evening, we break the bread and let the lively conversation begin. Laughter and love floating in the air, dancing together, intertwined as one. Oh, life is good under a setting Tuscan sun.

Shrimp Scampi with Scampi Butter
A few months back, I shared with you folks my Summer Birthday Bistro Style – a four course celebration featuring some of my favorite foods. I mentioned in passing that the prior birthday celebration featured many of my favorite Italian dishes. My family said it was more a party for them then for me. They were the ones treated to a impressive feast. It was a smorgasbord of foods. Two appetizers, three main meat/seafood courses, three sides, a salad and dessert. Something for everyone.

This year, I want to plant some Rosemary bushes in the back yard. I love the smell of Rosemary. It will be a few years until I can “harvest” clipping for skewers. In the meantime an early morning stroll through the farmer’s markets is always a joy.

Spicy Shrimp Skewers
I’ve been searching my recipes for anything grill worthy, preparing for yet another awesome grilling season ahead. When I came across a clipping from allrecipes.com; I knew I had to share. The ingredients reminded me of another favorite around here, Filipino Barbecue – an awesome skewered dish for another day. It was the familiar use of garlic and banana ketchup that struck a chord in me. I would even be willing to bet these barbecued dishes would be terrific served together.
