Angel Hair Pasta Pomodoro

It’s interesting to me how reading a recipe can inspire an entire meal. When I read this recipe, two things sprang to mind. First, I cannot wait for my beefsteak tomatoes to be ready to harvest. Secondly, I miss my little Italian restaurant that served spaghetti in a marinara sauce as part of your meal no matter what you ordered. While this is made with Angel Hair Pasta, it reminded me of that long gone place.

Archangel Hair Pasta with Shrimp

Archangel St GabrielToday is the 3rd Sunday of Lent. Depending upon your school of thought, this day could also be the Feast Day of the Archangel Saint Gabriel. Gabriel’s name means “the power of God.” Gabriel is called by name three times in Scripture. His first appearance is found in Old Testament, in the Book of Daniel (And I heard a man’s voice from the Ulai calling, “Gabriel, tell this man the meaning of the vision” Daniel 8:16). He is next found in the Gospel of Luke, when Gabriel brings Zechariah the news that his post-menopausal wife will bring forth a son, John the Baptist. Once more, Gabriel appears as the messenger of miraculous births with his visit to the Virgin Mary. While not mentioned by name, many believe that it was Gabriel who appeared to Joseph, who told the shepherds of the birth of the Christ Child and that he was the angle who comforted Jesus in the Garden of Gethsemane. As a messenger of God, Saint Gabriel is the patron saint of such organizations as broadcasting, postal workers and those in public relations among others.

Angel Hair Pasta with Shrimp in White Wine

So pretty. So delicate. So delicious. Served along side warm garlic bread and a simple salad of leafy-lettuce with tomatoes, this makes for one romantic supper or impressive meal when company comes a calling. I love pasta dishes for entertaining. Maybe that’s just the romantic in me – imagine a table set in the middle of a vineyard – friends gathered round just as the sun begins to set. In the twilight of the evening, we break the bread and let the lively conversation begin. Laughter and love floating in the air, dancing together, intertwined as one. Oh, life is good under a setting Tuscan sun.

Capelli d’angelo with Creamy Roasted Pepper Sauce

After a long day away from home, we all yearn for a supper that is easy to prepare, visually stimulating and satisfying to both our taste buds and hungry tummies. What could be easier than to boil a big pot of pasta, then toss all that delicate Angel Hair goodness in a rich, creamy sauce? I love this sauce, be it over pasta (today’s featured entrée) or chicken or better yet gently sautéed shrimp. If you like, this particular pasta dish could be elevated even further simply by adding a handful of sautéed garlic shrimp just before serving. Why only a handful?  The pasta in its rich, creamy pink sauce is the star of the evening.
