Welcome to a Wild West Wednesday
If January isn’t soup weather, I don’t know what is. There is nothing like cradling a warm bowl of soup in your hands, letting the steam rise up and warm you before that first spoonful of delight dances across your tongue.

My mother was born and raised in the Philippines. Her mother was Filipino with just a splash of Chinese. Her father was a Blue-eyed Spaniard. Much of the Philippines reflected Spain’s influence from the Catholic Faith to traditions.

Growing up Catholic made me feel special in a way. My faith was woven into the very fabric of my life. God ever present was comforting. It still is, but I wonder about the generations to come.

Way, way back in July of 2023 (yeah, that long ago) I shared with you the story of our favorite Mexican Restaurant, and my favorite dish to order on a Friday Night. I’m one of those weird people who can dine out, then manage to recreate the dish at home.

It’s been a while since we’ve dabbled in a fantasy menu. What better occasion is there to dream than with the coming of a new year, filled with possibilities.

Growing up, Dad always made a big pot of Ham Hocks with Beans and Sweet Cornbread to welcome the first day of the year. Yeah, that should have been Black Eyed Peas, but none of us would eat Black Eyed Peas. I passed the tradition of a pot of beans on New Year’s Day on to my own children.

December is the coldest, darkest time of the year for those living in the Northern Hemisphere. It is no wonder that so many of the Holy Days throughout December shine with candlelight.

When most of us think of our Lady of Guadalupe, we think it must be some sort of Mexican celebration. That would be true, but that’s not where it ends. Did you know that our Lady of Guadalupe is the Patroness of the Americas? That would be all of the Americas – from South America through Central America and North America.
