Today is the First Thursday in April. Nationally speaking, it’s Burrito Day. Didn’t we just make burritos? Yeah, we did for Nevada Day. My guys would say there’s no such thing as eating too many burritos. Still, variety is the spice of life.

Another Spicy Tuesday Night

Welcome to another Tuesday in my kitchen. While the rest of the world calls this Taco Tuesday, in our house it’s Tijuana Tuesday – so anything with a Mexican flare is a-okay with me.

Awesome Ro-Tel Chicken Enchiladas

All I can say is it’s a good thing today is Tuesday. It’s also Butterscotch Brownie Day. Great for me, not so much for Hubby who is not a fan of Butterscotch. I like to suck on Butterscotch Candies and drizzle butterscotch over ice cream. A Butterscotch Brownie deserved it’s own special day.
