Growing up, my Dad made the best tacos on the planet. He had a secret ingredient that has long since disappeared – Chorizo. My mother’s sister would send a tin of Chorizo from Spain every few months. I’ve tried over the years to find this same sausage, but no luck.

Gorditas Round Two
Hey there, do you remember my first attempt at Gorditas? The taste was there, but the Gorditas were too thin to puff up properly and create those much needed pockets for filling. So here we go again – same number of Gorditas created from even more dough.

What’s this – yet another Taco Tuesday? You bet! If there is one thing oh so popular in our house, it’s the Mexican staple – the taco. It’s a good thing I love to cook for my family. Most of what I make is so much better than anything we can get in a restaurant. The only reason to eat out is that someone else does the dishes.

When the first TV Dinners débuted on the food scene in 1953 it was a way to get rid of surplus turkeys. While convenient in the sense that all the little woman need do is warm it in the oven, these frozen tin trays could take upwards of an hour to cook.

Would you believe the one in the middle isn’t the middle child. Nope, that would be the sister to the left. The one to the right is the youngest of this group. And the one in the middle is the first born.

Tuesdays in general mean just one thing in my house – and that’s something wonderful with a Mexican influence. Be it Taco Tuesday or Spicy Lasagna, just bring on those Mexican flavors all the way. Today is also National Cheesecake Day.

Every year on the 24th day of July, I cannot help but to chuckle. Two National Days come together. Drive Thru Day and Tequila Day. Not exactly the most prudent of combination.

Hubby and I like to visit “Little Mexico” a few times a year, usually in the spring and early fall. The rest of the time it’s either too blistering hot or too wet to visit this huge flea market just south-west of us. We call it Little Mexico because it’s a lot like visiting Mexico.

Welcome to another Tuesday in my kitchen. While the rest of the world calls this Taco Tuesday, in our house it’s Tijuana Tuesday – so anything with a Mexican flare is a-okay with me.

Baja California is a magical place. There is the beauty of the desert combined with the blues of the ocean. Hubby and I both have a strong appreciation for the desert and the sea. Baja is one of those places that can steal your breath away for so many reasons. The people, the landscape and God’s creatures big and small.

Happy Birthday to me! It’s official, I am now older than the hills. That’s not quite as old as dirt, but getting there.

Today is Chocolate Chip Day. So I bet you were expecting cookies. Yeah, that isn’t want I wanted to do today.

Hard to believe it’s already the last day of April. It’s a bitch to get this old – the days just fly by – racing ahead to the inevitable conclusion of life. Wow, that sounds like a bummer. I just remember when I was a kid, summers seemed to last a lifetime. In some ways they did. Rarely was I the same person at the end of summer as I was at the start.

Okay, so it’s National Shrimp Scampi Day. If you were expecting yet another Scampi Recips, sorry to disappoint. As many of you know by now, the family took an amazing Cruise Vacation. Since we visited both Hawaii and Mexico, I’m in the mood for some Tropical Heat.

Today is National Picnic Day. I don’t know about you, but I simply adore the whole concept of a picnic. Especially one with my Hubby, the love of my life. Unfortunately, he’s really not able to sneak off on a Tuesday. And what fun is there in a picnic spent at his desk?
