Instant Pot Spicy Lime Chicken Tacos

I gotta tell you, every time I use my Instant Pot, I give Hubby a great big kiss. It’s Merry Christmas all over again. Meal prep is so fast. Don’t want fast? That’s okay, it has a slow cooker setting and a saute setting and a rice cooker and the list just goes on and on. I’ve heard tell the Yogurt Setting is perfect for proofing breads. That’s on my to-try list.

Slow Cooker Spicy Chicken Thigh Tacos

Most Chicken Taco recipes call for breast meat. Why not change things up a bit by using boneless, skinless chicken thighs instead? The flavor of the dark meat is superior to the white meat. The boneless, skinless variety of thigh meat isn’t overly fatty. And it’s a heck of a lot cheaper. All of these are definite reasons in favor of changing things up a bit.

Shredded Chicken Tacos (Crock Pot Style)

I love using my Crock Pot – especially during the summer, when you don’t necessarily want to heat up the house with the oven all day or slave over a hot stove. I especially like crock pot cooking on the weekends in the summer. Beautiful days are spent outdoors. With a crock pot, you can throw things together in the morning, then spend the day doing fun stuff, to return at the end of your adventure to a complete or nearly complete supper. Yeah, that’s always nice!
