To me, spring is bright sunshine and sweet berries. I know, berries really are more a late spring into summer thing, but still that’s what I think of in the spring. I think lemon is like a kiss of sunshine.

Celebrating Colorado Day
It’s that day again, National Colorado Day. Comes around every year on April 12. This year it just happens to take a back seat to Easter. Still, I did not want to overlook the 38th state of the Union.

As a Christian, today is a day of sorrow and of joy. Joy in the belief that Christ is the Risen Lord. Sorry for having caused Him pain and suffering. The reason that Catholic Churches have the Crucifix displayed above the alter rather than an empty cross is to remind us of the price of sin.

Good Friday’s Humble Vegetable Soup
Traditionally speaking, Good Friday for Catholics is a day of fasting and prayer. Once upon a time, fasting meant just that – to fast, to go without food or drink. Over time, the rules governing fasting have changed, mainly for heath reasons. Now fasting is defined as one reduced meal, with two smaller meals that together do no make up a meal. This modified form of fasting is a requirement for all Catholics beginning on their 18th birthday, ending on their 59th year.

Holy Thursday Roasted Supper
One of the traditions in our house is to have some sort of roasted meat on Holy Thursday. We aren’t lamb eaters; although I do love Lamb Gyros. Kiddo has to be in the mood for a Lamb Gyro, and Hubby says no way. He’s not really keen on strong flavors.

Happy Hump Day! The closer we get to Easter, the more excited I become. And that surprises me. I thought for sure I’d be sad, separated from my extended family on this most Holy of Celebrations.
Holy Wednesday Empanada Day
Each year on April 8, we celebrate National Empanada Day. The name Empanada comes from the Galicia, Portuguese and Spanish verb em pandar, which means to wrap or coat in bread. Empanadas are made by folding dough or bread around a seasoned filling. The Empanadas are then baked or fried, like savory hand pies.

One of our favorite things at Breakfast is an Omelette. Nine times out of ten, Kiddo will order an omelette when we are eating out. If we’re on the road, Hubby will go for either scrambled eggs or an omelette. And yeah, yours truly leans in the direction of a Florentine or Mediterranean style omelette.
Holy Tuesday Shrimp Tacos
We all love Taco Tuesday, even during Holy Week. In the past, we’ve tried to refrain from any meat during the entire forty days of Lent. Remember, those forty days do not include Sundays. Even during Lent, Sundays are Feast Days of the Lord. How did we do in our quest of No Meat Lenten Season? Failed. We did stick to the No Meat Friday, but didn’t make it through an entire forty-day abstinence.

Today is Holy Monday. It is the second day of Easter Week, which began on Palm Sunday. Palm Sunday marked Jesus’ triumphant entry into Jerusalem. Historical documents tell us that as early as the fourth century, the Church celebrated what was called “The Great Week”.
