No sooner do we get home from a holiday vacation when I start dreaming of next year. My sister and I don’t get to see one another as much as we would like, so spending a few days with her on the Oregon Coast was very special. We are talking about doing it again, only this time renting a beach house or condo. So naturally, I’m thinking about simple meals I could whip up without having to pack up an entire gourmet kitchen.

Spanish Chicken Skillet Supper
I don’t know about you, but I love skillet suppers in the summer. Any excuse NOT to use the oven while still serving up a hot, delicious meal works for me. With this particular chicken supper, some steamed rice and a toss salad is all you’ll need to make the meal complete.
Italian Chicken over Pasta is My Kind of Joy
Good morning all! Hope you are having a wonderful summer thus far. I remember as a kid, summers seemed to last forever and a day. Now, the heat just drags on for an eternity. The fact that we spent ten wonderful days in the Pacific Northwest with the rain and the cold and the fog only to return to the valley with its 100+ sizzling heat might have something to do with feeling drained. I would move to the Northwest in a heartbeat. Hubby prefers a little more sunshine. I blame it on the fact that he isn’t a tea drinker. To me, there is something wonderful about a damp morning and a hot cup of tea.

Buffalo Soldiers
Today is National Buffalo Soldier Day. It should come as no surprise that once upon a time in America’s history, segregation existed even in the military. Although several African American regiments were raised during the Civil War as part of the Union Army, Buffalo Soldiers were established by Congress as the first peacetime all-black regiments in the regular Army.

Not far from where I grew up, along a twisted Delta road is the town of Locke. Established in 1915, Locke is the last remaining rural Chinatown in all of America. That is not to say that Locke was exclusively Chinese. Some Japanese also helped to establish the Delta town of Locke, just across the river from the town of Walnut Grove.

Welcome to day two in Florence, Oregon. This picturesque coastal town sits on the banks of the Siuslaw River. Famous for Mo’s Clam Chowder, sand dunes and beautiful ocean views. Depending upon how you approach things, life here seems to slow down or speed up. Sound crazy, I know, but Florence has a great deal to offer.

Spinach Stuffed Chicken Breast
When do you usually do your marketing? We have gotten proficient at shopping only one day a week, which is both cost effective and efficient use of time. To make this possible, I plan our meals in advance, take full stock of what we have and what we need. One of the biggest reasons we try to avoid shopping more than once a week are those “grab” items. Walk through your local market and see how they tempt you to buy things you neither truly want nor need. You only think you want chocolate cookies. You only think you need to eat them tonight with a tall glass of milk. Now notice where the milk is kept – all the way at the far end of the store. How many temptations stand between you and a gallon of milk?
Easy Skillet Chicken Parmesan
Good morning everyone! I was so busy working on our shopping list for the week that I forgot to post a second recipe today. Not good. Now I suppose I could have made up for the oversight with an over the top production. But I’m in a simple yet tasty sort of mood, so an easy skillet dinner is just the ticket.
Italian Breaded Chicken Breast
This is one of those yummy Italian dishes that screams side of Spaghetti in a Marinara Sauce if you please! And don’t skimp on the green vegetables – maybe steamed broccoli or Asparagus kissed with Italian herbs. The menu practically writes itself. I love simple dishes that commands attention without screaming for it, know what I mean? This chicken is perfect for a family sit-down supper. A couple of plump breasts go a long way. Yeah, I like this dish. What about you?
