Easy Chicken Nachos To Top National Tortilla Chip Day

Today is National Tortilla Chip Day. I’ve already given you easy homemade chips. Now we need something to top them with. I can think of some wonderful recipes we’ve shared together in the past such as Marinated Flank Steak Nachos and Super Nachos for Supper, but let’s go with something simple. With premade salsa, Cheddar Cheese Soup and canned meats, these yummy Nachos are as easy to make as they are to eat. Yum!

Beefy Spanish Skillet Nachos

Not that long ago, I was cruising through a collection of Pillsbury recipes on line. For the most part, Pillsbury recipes are basic, not too complicated, with ingredients that are easy to recognize. My guys really enjoy simple, down home eating. I came across a recipe for Skillet Nachos. It was an interesting spin on the usual nachos. As a Pillsbury recipe, it called for “brand” ingredients, a certain kind of canned tomato, a particular taco seasoning and so forth. While I am sure those are all fine ingredients, it’s not what I happen to have in my pantry. If I can avoid shopping for special, brand-name ingredients, I do so.

Yummy Marinated Flank Steak Nachos

When I was first diagnosed with Diabetes, I thought my life was over. I would be eating like a rabbit while preparing wonderful, flavorful meals for my guys. Cooking two meals and resenting every minute of it. Have you ever noticed that people seem to react to a diagnose one of two ways? The first reaction is complete denial or over reacting. For me it was denial, until I spent three days in the ICU. Then the pendulum swung the other way – insanity set in and all I ate was lettuce. Okay, lettuce with chicken that had been poached without any seasoning. Uck!

Nachos for Supper?

Nachos are so often thought of as a snack food or appetizers. Piled high with spicy taco meat, nachos can also spell dinnertime meal. We love nachos on movie night or game night or just because. After all, what are nachos but a taco on a chip?  Hubby usually piles his plate a mile high with meat. Kiddo goes for plenty of Jalapeno Peppers. I love the gooey stuff – lots of sour cream, bubbly cheese and guacamole. Nachos are also a great way for casual entertainment. Put each of the “fixings” into a pretty bowl and set a buffet table. The meat can be kept warm in Chafers, the cheese in fondue pots. Make up a pitcher or two of margaritas. There ya go . . . a festively fun supper for friends and family alike.
