Awesome Ro-Tel Chicken Enchiladas

All I can say is it’s a good thing today is Tuesday. It’s also Butterscotch Brownie Day. Great for me, not so much for Hubby who is not a fan of Butterscotch. I like to suck on Butterscotch Candies and drizzle butterscotch over ice cream. A Butterscotch Brownie deserved it’s own special day.

North to Dakota’s Open Spaces

On March 2, 1861, President James Buchanan signed a bill creating the Dakota Territory. It was vast, encompassing both North and South Dakota as well as Montana and Wyoming. The name Dakota was taken from the Native American tribes who roamed in the area.
