If today is Tuesday, there must be tacos on the menu. It’s a good thing the Lord will bless a hot mess, because these Taco Bell inspired Crunch Wrap Supremes are just that – one hot mess.

Not Just Another Amazing Tuesday
It’s been a full month since our amazing Napa-Sonoma whirlwind get away. You would think some of the food craving would have worn off by now. Our first night in Napa we had dinner at an amazing Mexican restaurant; Los Agaves on the riverfront.

What’s this – yet another Taco Tuesday? You bet! If there is one thing oh so popular in our house, it’s the Mexican staple – the taco. It’s a good thing I love to cook for my family. Most of what I make is so much better than anything we can get in a restaurant. The only reason to eat out is that someone else does the dishes.

Hello Taco Tuesday! Have you ever had a Jimboy’s Taco? Hands down, one of the greasiest yet most delicious taco to come from a fast-food style eatery. Anyone who has ever had one has gone home and tried to recreate the experience.

Did you know that today is California Strawberry Day? I’m really not sure why. According to the powers that be (those in charge of “National” Days), National California Strawberry Day kicks off the strawberry season in California as it’s the first day of spring.

This isn’t the recipe I had planned to share today. It’s good, and very close to what I had in mind, but not exactly. Let me explain.

Today is National Kids in the Kitchen Day. In my opinion, spending time with our children in the kitchen is one of the most important things we can do. It’s a way of creating memories, passing along a little family history and teaching life skills.

What can I say about French Bread Tacos except to say they are different. Kiddo really enjoyed his tacos. But then again, he had a few Margaritas to go with the tacos, so that might have something to do with it.

Those of you who have been following along for a while know that I like to plan my meals out way, way in advance. Usually I put the final touches on the meal planner toward the end of the week for the following week, making little adjustments as needed. When I saw this great idea for a casual meal, I didn’t know where to place it.

One Saturday morning, Hubby and I were going over the week’s shopping list before heading out to the various markets. When the weather is nice, marketing includes a trip to a produce shack up the road for anything we need that we aren’t growing ourselves. Let me tell you, they have some of the best berries in town.

Did you know that the word “taco” first came into use in the 18th century silver mines of Mexico. Back then, a taco was paper wrapped around gunpowder. Hum, not very appetizing, is it?

I came across this recipe recently on food.com. The kiddo and I really like Jack-in-the-Box tacos – for reasons I don’t understand. (Hubby thinks we are daft). So we decided to give them a whirl. I added more beans than the original recipe called for, as well as more taco sauce to the meat mixture. The original recipe said it made 12 tacos. I only got 8 out of mine, but I was heavier on the filling than those you get at Jack-in-the-Box. The only draw back that I found was how much the grease splattered when the tacos were fried. You’ll need plenty of paper towels handy to blot the oil from the tacos before serving. These are NOT healthy tacos – it’s fast-food junk all the way. Even so, they are really good.
Taco Bell Inspired Crunchy Tacos
Did you know long before there was a Taco Bell, Glen Bell opened a drive-in taco stand in San Bernardino called Bell’s? That was way back in 1954, before the notion of chains and fast food franchises. By 1962, the first Taco Bell Restaurant opened in Downey, California. Two years later, the first franchise opened in Torrance, and three years after that there were 100 Taco Bells throughout southern California. I haven’t a clue when the first Taco Bell opened in my hometown. All I know is that when I was in high school; we could dig change out from under the sofa cushions, fill up on tacos and still have money left over for a tank of gas. Yeah, those were the days.

The absolute easiest way to make these tacos is to cook up a roast in the crock pot earlier in the week for a family meal. My crock pot recipe is Crock Pot Pot Roast with Potatoes and Shredded Carrots. Select a roast that is larger than what you would typically eat in a single meal, and save the left over roast beef for the tacos.

On the menu was an easy, south-of-the-border favorite in our house – Nacho Tacos. Just as the name implies, it’s a cross between a taco and nachos. Take your typical Nacho toppings, but instead of piling all the yummy ingredients over a big plate of tortilla chips, you stuff them inside a crunchy taco shell.
