Assumption and A Tart Fruit Pie

According to Catholic Teaching, at the end of her earthly life, Our Blessed Mother Mary was assumed, body and soul, to Heaven. Catholics worldwide celebrate the Feast of Assumption on August 15. It is a Holy Days of Obligation, one of five or six (depending upon the calendar) throughout the year in addition to Holy Sundays. The Feast of the Assumption is a public holiday in 43 different predominantly Catholic countries.

It’s A Fab Friday V-J Everyone!

Kiddo is not a big fan of Fridays in our house. Sure, he enjoys grilled cheese and tomato soups. He even likes Tuna Melts and meatless pastas. When it comes to most things that swim, he’s not always a fan. He’ll eat squid but not necessarily want salmon. That said, this simple battered shrimp received Kiddo approval.

Oh To Slumber Under the Stars!

Today isn’t just any old National Day, it’s a Global Day. Wow, now that’s special. It’s Global Sleep Under The Stars Night. You don’t need to travel to a remote spot or hike out into the woods. Set up a camp in your own backyard, or the terrace of your apartment. Anywhere that you can look up at the night sky is fine. Gazing up into a star-filled sky brings a calming peace and an overwhelming sense of awe bundled together.

One-Pot of Deliciousness!

I gotta tell ya, this was one of the most difficult dishes to make. And not for the reasons you might think. The first time I had this one-pot wonder on our meal planner was the day after restaurants closed for the second time in California. Don’t ask me why, but I felt very rebellious. Fine, if we can’t eat out, I won’t cook at all was my attitude. We can starve. That in itself made no sense since we don’t eat out very often. It was just frustrating to have options removed.
