Nugget Chicken Cacciatore

This chicken is awesome with a light pasta side, a simple toss salad and warm bread. Pour wine into jelly jars, put Dino on the record player and just say oh yeah that’s amore. I love casually elegant Italian suppers. While white wine might seem the logical choice, please think red. A nice Chianti is perfect.

Delicious Mushroom Pea Fettuccine

Recently I made what I considered to be a delicious semi-Italian Friday Night supper for my guys. As Hubby and I cleared the dishes, I commented that I really enjoyed the earthy woodsy-nuttiness that the blend of mushrooms, in particular the  Porcini Mushrooms, gave to the dish. Hubby shrugged. I took that as disappointment in my choice for a Catholic Supper.

An Oktoberfest Bratwurst Vegetable Supper

Here it is the end of October already and I have yet to share an Oktoberfest meal with you. To be honest, I don’t know much about Oktoberfest except that in Germany it is a big deal and here in America it is like Saint Patrick’s Day – an excuse to drink beer. Still, I wanted to do something colorful and festive for my family that involved beer – as in something cooked in beer. The solution? Bratwurst, of course.

A Spooky Goblin Supper in Three Courses

We have all seen the “snacks” for Halloween. Most of these are cute and kid-friendly. My Fun Party Foods for Halloween from last year is a prime example. We had fun with Barbecued Bat Wings (crock-pot chicken wings in a barbecue sauce), Deviled Spider Eggs (deviled eggs decorate with black olive spiders), and a Witches Broom Platter (string cheese brooms with pretzel broom handles). Cute, fun and all easy to assemble.

One-Pan Mediterranean Baked Halibut with Vegetables

After my bypass surgery, the discharge nurse went over the restrictions and recommendation for a healthy recovery and longer life. One of the recommendations was “heart healthy” eating. When I asked just what do they consider “heart healthy”, the nurse shrugged as though uncertain and replied “Oh you know, Mediterranean.” Really? That’s a pretty broad answer. With the internet and everything under the sun searchable, it’s up to us to do the leg work and become our own advocates.

Fall’s Apple-Jelly Glazed Pork Loin

What do you like most about fall? Is it the crispness in the air? The foliage in all its golden beauty? The sweetness of biting into a a just-picked apple? For me, it’s all of the above.
