Seared Sea Scallops with Lemon Caper Sauce

One of Hubby’s all-time favorites from the sea has got to be Scallops. I had never eaten a scallop until I married this man. I’ve got to tell you, one bite and it was instant gotta have this! They are tender, sweet and so delicate that scallops compliment rather than overpower the sauce, a salad or whatever vehicle used to get them from your plate to your lips.

Catch ’em While You Can – Oven-Baked Catfish

Growing up a Catholic in the 1950s and 60s meant eating a lot of fish sticks. If it wasn’t a fish stick, it was deep fried catfish. To this day, I still love a good catfish fry. But there are other ways to skin that fish and have it taste just as good. Take this oven-baked catfish. Too simple and way too delicious to be the real deal, yet it is. Served up with seamed broccoli and you’ve got all the makings for a beautiful yet healthy alternative to a down home fish fry.

Sufferin’ Succotash It’s Pan-Seared Catfish

As our old pal Sylvester the Cat would so often say, “Sufferin’ succotash!” It’s one of those expressions I heard on Saturday mornings growing up thanks to cartoons, and never questioned its meaning. It was understood as the utterance of frustration, a polite “Jesus Christ” that conveyed a level of discontent without the need to take the Lord’s name in vain. While I can remember hearing the expression from cartoon characters, I don’t recall ever hearing it from the lips of actual people.

Lenten Tartar Sauce Coleslaw on a Cod Fish Sandwich

Today is the eighth day of the Lenten Season. Time to really get creative and think outside my typical box. As I put together my meal planner, I asked Hubby if he liked Coleslaw. I had noticed that he generally cringed away from slaw that came as a side in some restaurants. He said sure, if it’s done right he would eat it. What about Tartar Sauce Coleslaw on a Cod Fish Sandwich? He gave me a strange look, thought for a moment and agreed he would be willing to give it a try. So the adventure began.

Not So Traditional Saint Patrick’s Day Supper

Today is the fifth day of the Lenten Season. Saint Patrick’s Day is less than a week away – that magical day when everyone suddenly becomes just a wee-bit Irish. Throughout the country, there will be parades as our rivers run green. It is a party in the streets. While the rest of America may be eating Corned Beef and Cabbage and raising a pint or three of Guinness, we will be dining on a less than traditional Irish-American fare.

Double Crusted Tuna Mushroom Pub Pie

We had a great weekend getting down to our Celtic Roots, and there was no time to cook! This weekend was the annual Celtic Faire in Sonoma, California. That is a big deal with us. The faire in Sonoma is the largest Celtic Gathering west of the Mississippi, and was even featured on the travel channel. While we attend others, this one is that cannot miss it even.
