Bacon-Wrapped Pork with Sun-Dried Tomato and Basil Beurre Blanc
This is now my second recipe that features Beurre Blanc. Literally translated, Beurre Blanc is French for “White Butter”. The very notion of white butter excites me. Unlike the Five Mother Sauces, Beurre Blanc is fairly new to the culinary world, an accidental creation of Clémence Lefeuvre some time around the beginning of the 20th century.

Pan-Seared Scallops with a Tomato-White Chocolate Beurre Blanc
Today is my birthday. So indulge me here . . . Hubby suggested we go out to dinner. For me, going out to dinner is a problem – when it comes to food, I have very expensive, elaborate tastes. In our little neck of the woods, there are no Five-Star French Restaurants. I’m not sure we have any Five-Star restaurants close by. I suppose we could drive to San Francisco and splurge with a ten-course supper at Quince. Both the menu and the price are fixed – oh bother!

Codfish a La Lyonnaise with Tender Fiddleheads
A few years back, while hiking through the dense coastal redwoods of the Pacific Northwest, I could not help but be taken in by the beauty of the forest floor. It was thick with lush green ferns. July was far too late to be hunting for fiddleheads, yet I could not help but to look – you never know. Hubby watched me for a few minutes, an odd look on his face. I explained that I was looking for an edible part of the fern. I’ve never seen fiddleheads in the markets and have been curious about them.

Forty-Cloves Slow Cooker Garlic Chicken Legs
What can I say – love all those French garlic rich chicken dishes. I adore chicken kissed with wine. I love playing around with new recipes. So here we are; with a new recipe to play with from Eat At Home Cooks.com. She has a great take on the Forty-Clove chicken – utilizing legs and cooking everything up in a slow cooker. The only changes I’ve made is to include warm baguettes and create a sauce of sorts using the chicken juices that accumulate in the pot reduced with a little white wine. Let’s face it, just about everything is elevated when wine is added to the dish. This recipe is a blend of her awesome crock pot method and my rendition of French Country Forty-Clove Garlic Chicken.
