When you are serving up some great Mexican dishes, what do you serve as a side? In our house, I must confess, it’s the usual suspects – refried beans and rice. I know, not very original. Every Mexican joint serves refried beans and rice. Just because it’s not original doesn’t mean ordinary.
Hubby’s all-time favorite Mexican meal has to be Tampiqueña, or number 34 on the menu of our neighborhood Mexican Cantina. Most nights, when we treat ourselves to a relaxing evening out, Tampiqueña is what Hubby loves to order. While I usually order a smaller platter, I will admit the Tampiqueña plate is delicious, offering you a variety of foods. And I’m lucky because Hubby is willing to share a little.

I love the colorful Mexican-Style corn you find in the canned vegetable section of the grocery store. It’s so pretty. Perfect for serving alongside spicy recipes such as Mexican Pork Chops with Ancho Chile Cornbread Stuffing or New Mexican Grilled Flank Steak. That said, I haven’t actually served the store-bought variety in years.
I know, this seems like a crazy post. Really – a recipe for warm tortillas? Yet so often, I see people trying to fill soft shell tacos or a flour tortilla only to have their tortillas fall apart, crack and just turn into a filling nightmare.
