No Ordinary Grilled Chicken Fajita Foil Packs

The beauty of Grilled Foil Packs is that you can prep the pack early to cook later. Having company? Make the Fajita and Tortilla Packs in the morning, clean up the mess. Once guests arrive, toss the foil packs on the grill. By the time the first batch of Margaritas are ready, dinner is served.

Sizzling Shrimp Diablo Tex-Mex Style

Diablo – Devil in Spanish. Another word for Hot Stuff when it comes to food. Chicken Diablo, Scallops Diablo and Hubby’s all-time favorite Shrimp Diablo. It’s that dash of Habanero Pepper Sauce that brings on the heat.

Pork Chops in a Blackberry Wine Reduction

Do you love berries? I know I do. I love just about any and all berries. My favorites are any berry that gives you a deep purple burst of summer. Blackberries, Huckleberries and Marionberries just to name a few. Spend some time hiking in the Pacific Northwest and you’ll get a taste of the most amazing wild berries on the planet.

Welcome to Wild Card Wednesday

No National Days jumped out at me for inspiration. There was National Pralines Day, but I’m not a candy maker. A pro at eating candy, just not big on making it. Our other choice – National Parchment Day. Goes well with Pralines, doesn’t it?

Instant Pot Spicy Lime Chicken Tacos

I gotta tell you, every time I use my Instant Pot, I give Hubby a great big kiss. It’s Merry Christmas all over again. Meal prep is so fast. Don’t want fast? That’s okay, it has a slow cooker setting and a saute setting and a rice cooker and the list just goes on and on. I’ve heard tell the Yogurt Setting is perfect for proofing breads. That’s on my to-try list.

Italian Roast Chicken

As I sat down to write a post about this awesome Roast Chicken Supper, it had been my intention to put together a whole Sunday Roast Chicken Supper thing. But then I realized the first Sunday I had open was Father’s Day Weekend. Italian Roast Chicken doesn’t exactly scram Happy Father’s Day, although it really should.

Bring on the Flavor of Arizona Day

When it rains, it pours. Or better yet, when there’s reason to Celebrate, there’s plenty to celebrate. It’s Father’s Day, and that’s a pretty big deal. But that’s not all today brings. It’s also Peaches-N-Cream Day, Day of the Gong, Go Skateboarding Day and Selfie Day just to name a few. Aside from Father’s Day, my favorite is that it’s also National Arizona Day.

A Burger Fit for Dear Old Dad

Truth be told, ever since we first had these awesomely delicious burgers in a pub in Sutter Creek, I’ve been looking for an excuse to make them at home. Father’s Day, as it turns out, is just the excuse needed.

Old Fashion Ice Cream Soda

Can you believe it? Summer!!! At least for those of us in the Northern Hemisphere. Makes me want to eat Popsicle and drink from a garden hose just like I did as a child. I can remember gathering up some of the newspapers stacked in the garage, and using them like Papier-mâché. We dug a hole in the ground, lined it with layers of wet newspaper  to create a “pool”. Once filled, my brother and I could float our Popsicle-stick Sailboats across our man-made sea.

Beer-Batter Fish with Green Chile Tartar Sauce

I grew up eating Cornmeal Coated Fried Catfish. It was the only fish I knew that didn’t come from a can such as tuna or salmon. It wasn’t until the Fast-Food Chain, Long John Silver, opened in our neck of the woods when I was in high school that I had even tried battered fish.

Alfredo Smothered Chicken

Do you like bacon? How about Pesto? And Alfredo? If you said yes to all three, this is a dish for you. Alfredo Sauce all on its own over chicken is delicious. Add to that the creamy herbs of pesto and the smoky crunch of bacon bits, and you are talking beyond delicious.

Sizzling Chili Biscuit Pot Pie Casserole

If you have been with me for a while, you know that I don’t always follow a recipe. Sometimes I’ll switch out an ingredient or make other changes that are better suited to our family, our circumstance and tastes. That is not to say it’s better for everyone, just better for us.

Nacho Chicken Casserole

I don’t know about you, but I love the idea of casseroles. Everything you’ll want all piled in a single dish. Maybe add a side of salad or some warm rolls, and there you go – dinner in a snap. And just about anything can be transformed into a delicious casserole.

Beef Burgundy over Egg Noodles

For many Americans, Campbell Soup is a part of everyday life, and with good reason. In 1869 a fruit merchant and an icebox manufacturer started a canning company in New Jersey. Joseph Campbell and Abraham Anderson canned tomatoes, vegetables, jellies, soups, condiments and minced meats. Anderson left the partnership in 1876. Campbell Soup Company went on to become one of the largest food companies in the world.

Welcome to the Land of Enchantment

Today we celebrate the 47th State to join the Union. Although the New Mexico Territory was established on September 9, 1850; New Mexico did not achieve statehood until January 6, 1912. Civil war and slavery stood in her way.
