Spirit of 45 and the Greatest Generation

Today, the second Sunday of August, is National Spirit of 45 Day. We could get into a whole political debate about the Greatest Generation and what made them so great. One thing is certain, there is much to admire in those who are the Greatest Generation – the G.I. Generation. Just as my generation, the Baby Boomers, are those born between 1946 and 1964, the Greatest Generation are defined at those born between 1901 and 1927.

The Beauty of a Cowboy Tater Casserole

Today is National Pina Colada Day. As everyone knows, Pina Coladas are a sweet, rum-based cocktail that includes Cream of Coconut and Pineapple Juice. If you are expecting a recipe, think again. While I do like Malibu Rum (coconut rum) in a tall glass with Pineapple Juice, that’s about as close as we come to a Pina Colada in our house.

Wow – Cheesy Italian Beef Pie

Today’s National Day needs no recipe. It’s National Grape Popsicle Day. Easy enough. Make up a batch of Grape Cool-Aid. Pour it into plastic cups, place in the freezer. Once the liquid begins to freeze, insert popsicle sticks, continue to freeze until solid. Too much trouble? That’s okay, you’ll find popsicles in the frozen section of the grocery store.

Embrace the Day with Home-made Hot Pockets

Last year, Empanada Day fell on Holy Wednesday of Holy Week. This year, it’s the Thursday after Easter. On the Church calendar, we are now officially into the Easter Season, also known as Eastertide. In the Church, the Easer Season are the 50 days from Easter Sunday to Pentecost Sunday. Easter Season is celebrated as a single, joyful feast called the Great Lord’s Day.

Honoring the Buffalo Soldier

Today is National Buffalo Soldier Day. In 1992 Congress set this day aside to commemorate the formation of the first regular Army regiments of African American soldiers in 1866. Following the Civil War, Congress passed the Army Organization Act, creating six all-black cavalry and infantry regiments. It was the first such creation during peacetime.
