Barbecue Chicken with Golden Eagle Sauce

Hubby’s family came up with Golden Eagle Sauce. It’s been a family recipe for decades. If you want to learn the whole story of Joe and Nelda Goodwin and the Golden Eagle Tavern, be sure to check out my recipe for Country Ribs.

Slow-Cooker Cordon Bleu Inspired Chicken Pasta

It’s been a month since we’ve done anything even remotely “Cordon Bleu”, and Kiddo has been clamoring for Chicken Cordon Bleu. Every time we plan out a menu together; he suggest Chicken Cordon Bleu. I keep deflecting. Maybe it’s all this day in and day out of cooking two; three or more meals a day that is making me so darn lazy. Maybe making traditional Cordon Bleu is just too much work.

Pesto Chicken Ring

Don’t you just love foods that you can eat without utensils? Some might say like a pizza, but then I eat my pizza with a knife and a fork. When pizza comes straight from the oven, all that hot cheese and sizzling pepperoni – too dangerous. I can’t tell you how many times I’ve had molten cheese drip down my chin. Actually, most foods I eat with a knife and a fork – or at the very least a fork. How ’bout you?

Dad’s Marinated Chicken Skewers

If the recipe seems oddly familiar; you aren’t too far off. The marinade is the same one used for my Dad’s Awesome Beef Kabobs. I swear; this marinade can be used for just about any kind of meat. Chicken, pork, beef – it all comes out great.

Buffalo Chicken Braid

Kiddo and I devoured this spicy chicken braid. It was as though we could not get enough. Hubby was a different story.  He felt the bell peppers were too much. But then again, Kiddo and I like bell peppers, while Hubby is not a big fan. He thought instead of bell peppers, we could have used some of the garden peppers from the freezer.

A National Day Made Easy

Today is National Chicken Cordon Bleu Day. Each year on April 4th, we celebrate a dish that sounds French, but is actually an American adaptation. Cordon Bleu is the French term for “Blue Ribbon”. In France, a similar dish is made with Veal. Both are delicious.

Mushroom Rice Chicken Revisited

It’s been two years now since I shared my recipe for Baked Chicken Breasts with Mushroom Rice. This is kind of, sort of but not quite that same recipe. Yeah, that makes sense.

Hot Sauce Chicken with Spicy Gravy

Today is National Hot Chicken Day. I gotta tell you, this was not the original recipe chosen for today. I had wanted to share a recipe for Chicken-Fried-Chicken with a Creamy White Gravy. So why the change? Buttermilk isn’t something I keep in the fridge, it’s something I buy only when a recipe calls for it. And I didn’t have any at home. The thought of braving a trip to the market for one recipe just wasn’t cutting it.

Chicken Spinach Skillet Pie

Today is the first day of Spring, and National Poultry Day. Hubby and I are getting the garden started early this year. We want to get a jump on fresh vegetables. We are especially anxious for this year’s tomato crop. I see sauces and salads in our future.

There is more to Italy than Tomato Sauce

Would you believe it’s another of those National Food Days. Like any of us need an excuse to eat delicious foods. Today we have a great assortment of things to celebrate – it’s Cheddar Cheese Day, Italian Food Day and Tortellini Day.

Popcorn Chicken with Garlic Aioli Dipping Sauce

There are so many things that I love about this time of the year. I like the smell of wood burning. We live in an area that has nearby farm houses. These are old homes that burn wood for more than just ambiance. We are surrounded by orchards. The old, less producing trees become firewood. I love the smell.

Balsamic Red Wine Chicken Fit for Company

Boneless, skinless chicken breasts are always a healthy choice. However; on their own, these breasts can be fairly bland. Let’s face it, there’s healthy eating and then there’s boring eating. Life is too short for boring.

Breaking the Rules New Orleans Gumbo

At its heart, gumbo is nothing more than meat or seafood cooked in a stewing sauce. Traditionally, gumbo includes rice, almost as an unwritten rule. However; rules are never carved in stone. Right?

Apple-Mustard Chicken Tenders is Country Good!

Apple season is coming. I love the fall for all those delicious ways to use apples. I especially love apples without a pie. Don’t you?

Clucking Little Foil Packs of Goodness

No sooner do we get home from a holiday vacation when I start dreaming of next year. My sister and I don’t get to see one another as much as we would like, so spending a few days with her on the Oregon Coast was very special. We are talking about doing it again, only this time renting a beach house or condo. So naturally, I’m thinking about simple meals I could whip up without having to pack up an entire gourmet kitchen.
