There are National Days (for America) and International Days to celebrate. Sometimes, the National and International Days are one and the same. Sometimes the National Days exist only in America. Still other days are different depending upon the calendar used.

Easy Gordito Ground Beef Taquitos
Today I’m going to share with you what I consider to be a work in progress. While these Taquitos are good, with just the right amount of crunch, there’s something missing. It might be years before I declare these Ground Beef Taquitos to be perfect. In the meantime, we’ve got good.
Supper Time is Fun Time with Taco Biscuit Cups
Taco Biscuit Cups are super easy to make, fun to eat and unbelievable filling. One or two “biscuits” is more than enough for even the largest appetites. My guys loved them. Hubby said he could eat Taco Cups several times a week. They are that good.

Savory Slow-Cooker Mexican Pot Roast
There is something about the fall that brings out all sorts of roasts for dinner. I’m not sure if it’s the cooler evening that sparks a desire for meatier dishes or the nostalgic mood that seems to come with Autumn. All I know is that a roast of some sort is always welcome at the table.
The Grand Taco Touchdown!
I know, football season has barely begun, so why am I thinking Super Bowl? In part because I don’t really care what teams are playing so I can think ahead. I’m only a fan of football for two reasons – I love my husband and I love the “munchie” style foods we all enjoy.
Hot Salsa Chicken Burrito Wraps
Recently I mentioned our prior life – one with travel to far away places. Every now and again, when I think Mexican Foods I think of Cozumel. I remember walking through the streets of Cozumel with Hubby and Kiddo, taking in the sights and sounds and smells of this seaside town.
Jug Bands and Chorizo Burgers
The first time that I came across the idea of a Chorizo Burger Topped with Shrimp was about a year ago. My guys wanted a weekly burger night, and I wanted to inject a little variety. The weekly burger night idea didn’t last long. It’s not the healthiest of meals and even the best burgers become mundane after a while. So this recipe was tucked away for another day.
The Beauty of a Mexican Cobb Taco Salad
On the menu was a Mexican Cobb Salad with Nacho Chips. My guys knew we were having salad. When they came home from work, they paused in the kitchen, looking strangely at the cans and seasonings on the counter. You would think by now they would know we don’t do anything “ordinary” when we can go for extraordinary.
One-Pan Flank Steak Fajitas Bursting with Flavors
If you are like me, you really like the ease and convenience of a one-pan or one-pot meal. While this dish requires a little more, in the spirit of one pan cooking it rocks.

Skillet Chipotle Bean Dip
Oh my gosh, how did this happen? The regular NFL football season is nearly upon us. Already I’ve lost Hubby to the pre-season games. The opening game is just two weeks away, with Green Bay at Chicago for the Thursday Night Game. There’s only one thing to do to win his attention and that is to make a few favorite game day munchies.
One Skillet Taco Macaroni Skillet Supper
My guys love Macaroni and Cheese. They love tacos. So why not give them what they love in one dish? Better still, this is a skillet supper. As in one pot or skillet is all it takes. Gotta love that!
Ro-Tel Spicy Beef and Bean Burritos
Not that long ago, we took a much needed family vacation. While we were away, a friend cared for our garden. Being a gardener himself, he had no need for our crops. He simply came and watered. The pepper plants went nuts! We came home to more peppers than we knew what to do with.

A Cheater’s Chicken Verde Mole
One of Hubby’s all-time favorite dishes has to be Chicken Mole. When it comes to making Mole, I tend to get lazy. However; using a concentrate is the first quick step into excellence.
Beefy Tacos to the Rescue
One Saturday morning, Hubby and I were going over the week’s shopping list before heading out to the various markets. When the weather is nice, marketing includes a trip to a produce shack up the road for anything we need that we aren’t growing ourselves. Let me tell you, they have some of the best berries in town.
