Today we honor and celebrate the state of Firsts – Delaware. First to declare independence and establish a state constitution. Delaware boasts the earliest Swedish settlers in 1638, and the first to build a log cabin. There is reason Delaware’s motto is “The First State.”

Asian Jalapeno Chicken and Sticky Rice

Today is National Two-Eye Color Day to celebrate those rare people with two different colored eyes. I bring this up because Hubby is one of those with two different colored eyes. One is brown most of the time, changing to a green olive or hazel, the other is blue that darkens to a gray.

The Beauty of a Cowboy Tater Casserole

Today is National Pina Colada Day. As everyone knows, Pina Coladas are a sweet, rum-based cocktail that includes Cream of Coconut and Pineapple Juice. If you are expecting a recipe, think again. While I do like Malibu Rum (coconut rum) in a tall glass with Pineapple Juice, that’s about as close as we come to a Pina Colada in our house.
