Slow-Cooker Cordon Bleu Inspired Chicken Pasta

It’s been a month since we’ve done anything even remotely “Cordon Bleu”, and Kiddo has been clamoring for Chicken Cordon Bleu. Every time we plan out a menu together; he suggest Chicken Cordon Bleu. I keep deflecting. Maybe it’s all this day in and day out of cooking two; three or more meals a day that is making me so darn lazy. Maybe making traditional Cordon Bleu is just too much work.

Best Darn Taco-Margarita Bar in Town

Let’s start with mixing up our own Taco Seasoning, making our own Chorizo and then putting out a build-it-your-way Taco bar. Who needs restaurants to be open? A restaurant means you have to put on pants, get in the car and drive somewhere. Depending upon where you live and how “open” things are, that could be a long, long drive. Making a Taco Bar at home doesn’t require any of that. Okay, maybe pants would be nice, but not required.

Returning to a New Sense of Normal

On March 10th Hubby and I traveled up into the Mother Lode to the small town of Sonora. It was a yearly sojourn to attend one of the largest Celtic Festivals west of the Mississippi. This year’s gathering was small and the festival grounds felt more like a ghost town. While the word “pandemic” had yet to be spoken, the fears were already setting in.

Florentine Style Cod

Seafood Lasagna

Another beautiful Friday in Paradise. Or at least as close to paradise as we can get. Hubby is here. Kiddo is here. My family; scattered round the world are healthy as far as this pandemic is concerned. We did have one loss. My cousin’s wife passed in early April; a stroke. Amanda was in her late forties; young for a stroke. Within my Filipino-Spanish side of the family, a cousin is no different than a sibling. Aunts and Uncles are second parents. Kiddo refers to my aunts (his great-aunts) as Lola; grandmother. So any loss, no matter the blood-line distance; is felt deeply. Michael is a man of faith; and the Lord has continued to comfort him.

Easy Hassleback Baked Chicken
