Have you ever had a meal on the menu for weeks and yet something (like life) keeps getting in the way? Such was the case of for Cod Piccata. The first obstetrical was acquiring Cod, as in not the stuff from the freezer but the fish counter.
One-Pot Ground Beef Pasta with Versatility
When I saw this one-pot delicious Spaghetti dish with plenty of vegetables, I knew instantly that it would be a one-pot hit in our house. So pretty, so flavorful and so perfect for this time of year.

Mexican Jalapeno Nacho Dogs
Do you like Nachos? We love Nachos. Sometimes when attending street fairs or festivals, Kiddo and I will get big plates of whatever Nachos. The beauty of Nachos is that just about anything can be transformed into that gooey-Mexican goodness.

There is something wonderful about fresh Rosemary and potatoes, don’t you think? And I love the smell of Rosemary as it is roasting in the oven. Just thinking about creamy, silky rounds of potatoes with nothing more than Rosemary, salt and pepper for extra flavor gets my mouth to watering. Such simplicity.
Breaking the Rules New Orleans Gumbo
At its heart, gumbo is nothing more than meat or seafood cooked in a stewing sauce. Traditionally, gumbo includes rice, almost as an unwritten rule. However; rules are never carved in stone. Right?
Polynesian Pineapple Barbecue Meatballs
It’s getting to be that time of the year again when parties, pot lucks and office gatherings abound. I don’t know about you, but I’m always looking for something just a little different. While I’m retired, I still make all sorts of things for Hubby and Kiddo to contribute to office gatherings.
Mini Jalapeño Cornbread Muffins
First off, these muffins are so darn cute! We are talking 2-bite muffins. And while made with fresh Jalapeño, they really aren’t spicy, just flavorful. These muffins can go with anything you would normally serve with a side of cornbread. Yum!
Asparagi al Limone e Gemelli
Foods just sound so much more interesting in French or Italian. This dish sounds fancy, when all we are really saying is Asparagus with Lemon and Pasta. Okay, so we are mentioning the type of pasta, too.
Roasted Game Hens with Orange Sauce
I get my inspiration from a multitude of places, everything from serving the web to reading cookbooks. I am a very visual person, so pictures speak to me. While surfing the net for roasted chickens, I came across a recipe for a roasted chicken with an orange sauce. I read the recipe, but it didn’t fully jive with the photo. Hum, what’s up with that?
Peppered Rib Eye With Roasted Garlic
Me extended family is coming to dinner soon. I’ve promised an awesome six-course supper. At first I kicked around the idea of building a menu around French or Italian flavors. While multi-course meal planning is challenging all on its own, French or Italian dishes seem to make the planning a little easier. An American Six-Course Supper? Now that’s a challenge!
Colorful Bell Pepper Corn is Magical
The first time I made this corn dish for my family, it was a cold, wet Sunday in May. I don’t know about your neck of the world, but in our central valley of sunny California, spring had made an abrupt turn and winter took its place. We were cold. Freezing cold. Snow in the mountains. It was cold and wet. Can’t go outside wet and worried my garden was going to suffer wet. Thunder and lightening and hail. Strange for the end of May.
Spicy Chili Cheese Corn Dogs
Would you believe that under all the spicy chili, creamy melting cheese, diced onions and chopped fresh peppers is a Corn Dog? Yep, this delicious casual supper is super easy, super tasty and super messy to eat. Although the Corn Dog has been around since the 1920s, I did not grow up eating Corn Dogs. We ate hot dogs. Lots and lots of hot dogs.
Texas Roadhouse Smoky Espresso Steak
More and more, the Flat Iron Steak is popping up on Steak House menus. There is good reason. Flat Irons are flavorful, lean yet tender. The Flat Iron is actually a cut from the Chuck, so it’s relatively inexpensive when compared to the Tenderloin that gives us our Filet Mignon.
Celebrating National Fried Rice Day with Super Fast Vegetable Fried Rice
Did you know that today is National Fried Rice Day? Yep, an entire day dedicated to fried rice. I love fried rice. What I don’t like about it is that authentic fried rice is something that requires planning. Everyone knows the best rice is day-old or at least hours old rice.

Jazzy Cajun Fish over a Bed of Yellow Rice
Next month we have three different festivals up in the Gold Rush country of California. These events are all on the same day. It’s going to be hard to pick just one.
