Taco Joe Biscuit Sliders

I gotta tell you, when I first started cooking up the ground, I had to wonder – a pound of ground beef seemed a bit much for 8 biscuit sliders. Wrong – it was the perfect amount. These “bites” might seem small, but they are packed with flavor and super filling. Have you ever made a Taco Braid? These sliders are similar, only much easier to assemble.

Asian Barbecued Chicken Thighs

I love my Spicy Asian Inspired Stir-Fry Spaghetti, often serving it up along side such family favorites as Chicken Adobo. Since I am always on the lookout for new ways to serve up the noodles, I had to give this Asian Barbecued Chicken a try. What an awesome pairing! There’s something about fresh ginger and garlic dancing along my taste buds that I find exhilarating.  The sweetness of the brown sugar, the salty flavor of the soy sauce – yeah baby!

Tex-Mex Beef Dip Sandwiches

The absolute best thing about summer is that you can eat sandwiches for dinner! And this Tex-Mex Beef sandwich is so packed with flavor, you won’t even notice it’s not really a meal. At lease not one you need to use a knife and a fork for.

Onion-Sausage Hamburgers over an Open Flame

When my children were small, we ate our share of burgers. Burgers were easy to make, filling and always kid-friendly. However; burgers can become a rut in and of themselves. I was always “experimenting” with burger recipes, looking for new ways to serve up the same old thing. One of my favorites from the “old days” was to mix breakfast sausage (Jimmy Dean regular) with ground beef. The sausage brought a wonderful flavor to the burger. Cooked on a hot grill, the outside of the burger developed a nice “char” while retaining a juicy interior.

Garlic Herb Butter Roasted Chicken

Happy Sunday Morning everyone! I love it when the Good Lord sees fit to bless me with another day. It’s important to remember to count your blessings, big and small. Just waking up in the morning is a blessing all its own.

Next Up – Father’s Day Barbecue

One more week and counting. Now that we live in another town, holidays are especially meaningful. Never take your family for granted. A few years ago, Father’s Day with dear old Dad was celebrated on Saturday. Dad’s not getting about as he once did and that year he was fearful to venture from the family farm. Just as well, I enjoy the farm.

Cube Steak and Summer Suppers

Kiddo has tossed a salad. Hubby has mashed the potatoes. The table on the back patio is set for three. I love summer evenings, don’t you? Oh to the simple things . . .

Grilled Lemon Chicken Breasts

For those of you on Face Book, have you notice those prompts to “see a memory” and the option to re-share that memory? Shock of shocks – most of mine revolve around food! Many of these prompts are from before my blogging days, when I shared recipes with just my friends and family via Face Book.

Bayou Country is Calling Me

While I have wintered in the South Pacific and summered in the Pacific Northwest, I have never stepped foot in the state of Louisiana. That’s not a reflection on the great state of Louisiana, I’ve just never been there. Yet, for reasons I have never understood, every June I get a hankering way deep down inside my soul for bayou country. I hear Credence  Clearwater Revival playing in my head.

Lazy Man’s Super Easy Citrus Tequila Flank Steak

Rain 2One of my blog followers is my dear, sweet Hubby. It’s nice to have his support. The day after my birthday, he said he was surprised that there was no mention of his gift to me. It wasn’t that he needed the public acknowledgement, but rather he was surprised that something I had enjoyed so very much received no mention. Let me tell you, it was an awesome gift! It’s also something I couldn’t share in photographs. No cameras allowed once the the show got started. Hubby took me to see the Beatles tribute group, Rain. What a show! It was more than two hours of some of the best Beatles cover music ever. And in that time, I relived my entire youth. Thank you, Hubby, for the best birthday ever!

Almond Chicken with Apricot Sauce

One of the things I really like about our new “old” digs are the almonds. We live in a community surrounded by almond trees. There’s even an almond festival and an almond parade and all things almond. Do you have a bottle of almond extract in your pantry? Go get it, open the bottle and take a big whiff. Do you smell that sweetness of the almonds? That’s what it is like to step outside in the spring, when the trees are in bloom.

Wedge Cut Garlic Fries to Rock your World

Steak dinners are amazingly versatile. Dress it up, dress it down. It doesn’t matter if you are wearing fancy duds or jeans and your favorite pair of boots, the steak is what you make of it. Take a Rib Eye Steak served in a wine reduction sauce with Fire Grilled Asparagus and that’s fancy stuff. Serve up a Grilled Rib Eye with Jack Daniel’s Sauce, plate it with creamy mashed potatoes and sautéed vegetables, and it’s a whole different steak. Get down to the Cowboy Way of doing things and you’ll want to dress it down while keeping everything awesomely delicious.

Guy’s Garlic Sausage and Asparagus Packages

Do you have picky eaters in your house? I think that’s a gimme – we all live with finicky people. Heck, we might even be that gotta have it a certain way or won’t touch that person.  While my guys are fairly open minded when it comes to food, both have their quirks.

Grilled Ham and Cheese on Buttery Garlic-Parmesan Sourdough

The party is over – birthday dreams are behind me – time to get to blogging for the real world. Truth be told, I love sinfully delicious gourmet dishes. However; in the real world, I don’t always prepare gourmet suppers. Those are reserved for special occasions.

Pan-Seared Scallops with a Tomato-White Chocolate Beurre Blanc

Today is my birthday. So indulge me here . . . Hubby suggested we go out to dinner. For me, going out to dinner is a problem – when it comes to food, I have very expensive, elaborate tastes.  In our little neck of the woods, there are no Five-Star French Restaurants. I’m not sure we have any Five-Star restaurants close by. I suppose we could drive to San Francisco and splurge with a ten-course supper at Quince. Both the menu and the price are fixed – oh bother!
