Preparing for Easter with a Vigil Tea

Today marks the 40th Day of Lent, the darkest of days, the Easter Vigil. It is the day of mourning, of dark uncertainty before the blessings of Easter Morning are revealed. Thought, reflection and prayer went into creating this menu for my first Easter Vigil Tea.

Tourin à l’ail – French Garlic Soup

Folklore tells us that garlic, a member of the lily family, grew from Satan’s left footprint when he left the Garden of Eden. I wonder if the garlic was meant to keep him out. That would explain why garlic has such an effect on vampires, dark magic witches, werewolves, demons and other scary creatures that go bump in the night.

Codfish a La Lyonnaise with Tender Fiddleheads

A few years back, while hiking through the dense coastal redwoods of the Pacific Northwest, I could not help but be taken in by the beauty of the forest floor. It was thick with lush green ferns. July was far too late to be hunting for fiddleheads, yet I could not help but to look – you never know. Hubby watched me for a few minutes, an odd look on his face. I explained that I was looking for an edible part of the fern. I’ve never seen fiddleheads in the markets and have been curious about them.

Lemon Pepper Broiled Tilapia

Surprise, it’s me again. I know it’s not the norm for me to share three recipes in one day. However; I realized that my Lenten Offering for Holy Thursday has actually been shared twice. The first time I shared the Tilapia recipe was back in March, as part of diabetic awareness and alert day. As a diabetic, these health issues are important to me personally.

Spice Rub Baby Back Ribs with Golden Eagle Barbecue Sauce

I don’t know how things are where you call home, but here in the San Joaquin Valley we are basking in wonderful spring weather. April’s beautiful liquid sunshine, wet in the morning, but by afternoon it’s perfect for getting outdoors. This is hiking weather, or for taking long drives in the country. Best of all the afternoons are made for backyard barbecues. Hubby had been eyeing the country ribs for a while, waiting for the rains to subside and the days to warm. Guess everyone else in the neighborhood had the same longing because when we finally decided to pick up a few pounds of meaty country ribs, the pickings were slim. However, the pork baby backs were looking pretty good. Switching gears just a bit, we picked up a couple of nice racks.

Italian Tilapia and Zucchini Skillet Supper

Today is Holy Thursday, the 38th Day of Lent. Catholic Tradition tells us that today Christ dined with his disciplines in an upper room for their Passover Meal. It was to be their last night together. This was a solemn night.

Bacon Jalapeño Jack Cheese Ball

Hey everyone! Did you know that, according to the National Food Calendar, today is National Cheese Ball Day? According to those in the know, we can participate in one of two ways – the real deal of a ball made from cheese served with crackers or by eating Cheese Ball Puffs. Hum – real cheese or corn puffed up in a ball. Real goodness or an orange dusting of cheese “flavor”.  Cheese Balls, as in the real deal, make their presents known in our house during the Holidays, or Thanksgiving in the form of a pumpkin patch or a Turkey, and Halloween in the form of a Big Black Rat.

Easy Shrimp and Broccoli Stir-Fry

We haven’t had anything Stir-Fried in a while, have we? Stir-fry is always a hit in our house. While stir-fry isn’t complicated, it can involve a ton of prep work. What I’ve found that works best is to read through the recipe completely, gather the ingredients, measure everything out into little whiskey-shot size bowls and line it all up. That was when it comes time to stir-fry, everything is ready and at my finger tips.

Creole White Bean Soup with Vegetables

Once again, we are really stretching it here. On the National Front, it’s Orchid Day, Eggs Benedict Day, Wear Your Pajamas to Work Day (my personal favorite!), Healthcare Decision Day and National Bean Counter Day. Now I know that I could have shared a recipe for Egg Benedict today. That would have been easy. But you know me, always thinking outside the box. Bean counter – beans – bean soup! Makes sense to me!

Easter Sunday without the Ham

Wow – guess I’m becoming a bit of a rebel in my own kitchen. First with Saint Patrick’s day; and now Easter . . . I mean just imagine Easter without a Ham!

Prayers for Paris

There are no word to express what I feel at this moment. The world is weeping.

Easter Brunch Makes Sunday Special

I simply adore creating beautiful menus compete with delicious recipes to mark the significance of a particular day. While there are certain foods that make an appearance year after year, new twists are a fun way to bring variety to the table. While it has been twenty years or more since my family did a big brunch for Easter, I remember it fondly. A nice ham, Ann’s Awesome Quiche, warm rolls, several vegetable dishes that bring color to the table while complementing the overall “feel”. No true breakfast food in sight. Oh but it was all so very delicious. Why not do it again?

Cilantro Lime Shrimp with Mango Avocado Salsa

Have you seen this awesome recipe for shrimp from Dinner at the Zoo? Oh my, how absolutely breathtaking! The colors, the flavors, the bright promise of something wonderful. She has this dish categorized as an appetizer. And it would make one terrific appetizer for a Cinco de Mayo themed party. But I’m thinking about a light supper during Lent. And with all those colors – a promise of great things to come – like Easter Morning and the promise of forever. Wishing everyone a perfectly delightful Holy Monday!

Hand-Pressed Tortillas

Lately I’ve gotten into a tortilla-making kick. Every time I mention making tortillas on my personal Facebook page, I get requests for the recipe. This was not what I had planned to share today, but that’s okay. I aim to please and I know my family is anxious.

Cajun Seafood Paella Risotto

I suppose you could argue that a Risotto cannot be a main dish. Risotto is a side dish, right? Well, yes and no. This Paella Risotto is so packed with things like pepper, tomatoes and corn. Better yet, there’s plenty of shrimp and bay scallops. This dish has got it all. Served with a crisp salad, you’ve got dinner. The best part about this particular “Paella” is that you don’t need a special pan or an open fire or anything beyond a pot and your stove top.
