Hey there – how’s life? Time finally seems to be moving again – sort of and just a little too fast to suit me. I don’t mean life is returning to normal, because in California it is anything but. Yet time still flies. We’re now a whole three weeks beyond half way through the year, on the backside.

And the Sides Have It
Before we get down to the business of talking recipes, I wanted to acknowledge the day. Today is Kiddo’s birthday. It is also the Feast day of Our Lady of Mount Carmel. The Carmelite Order dates back to 1155. Carmelites originated in the Holy Land as a group of hermit monks. Over time, the order transformed into one that takes a vow of poverty and the Carmelite friars and nuns dedicate their lives to care for the poor.

Once upon a time Gummy Worm Dirt Cups were the Gold Standard of dining out. At least as far as Kiddo was concerned. In his book, if a restaurant offered Dirt Cups for dessert, it must be a Five-Star establishment. One thing was true, any restaurant offering Dirt Cups was family-friendly indeed.

Are you having a wonderful Tijuana Tuesday? Gosh, I hope so. I also hope you are in the mood for some very sticky-spicy drumsticks. These were finger-licking good. You’re gonna need wipes, not napkins, with this chicken because the paper will stick to your fingertips.

On the National Day Front, today is French Fry Day, Beans and Franks Day and National Delaware Day. Delaware is recognized as the first State in the Union, as it was the first colony to declare independence from British rule and the first to adopt a territorial state constitution.

This year we planted some Rosemary in the front yard. I had tried (foolishly) to grow Rosemary in my herb garden. Let’s just say that an herb that grows into a big bush has no business in a small clay pot.

Good Morning – rise and shine. Today is National Blueberry Muffin Day. Did you know that Blueberry Muffins are the most popular among Americans? Blueberry muffins are so loved in Minnesota, that a law was passed recognizing them as the official State Muffin.

Shrimp again? Yeah, I know we just had Tex-Mex Diablo a couple of weeks ago, and Louisiana Shrimp a couple of weeks before that. What can I say? Our local market has been promoting shrimp, and when the price is right, we buy.

The first time I read though this recipe from Pillsbury I thought it was good, but needed some tweaking. After all, they called their recipe Zesty Italian Crescent Casserole. Catchy title, but one small problem. Well, actually two if you want to get picky about it.

Maybe it was the whole Stay Home ordeal that make Casseroles come back in such a big, big way. Families gathered ’round the supper table just like the good old days. It sure has been fun. Personally, I’me glad that the Casserole is once again taking center stage. At my table, it never left.

And call it Macaroni. Yep, today is National Macaroni Day. When most Americans think Macaroni, we think Thomas Jefferson and the French Delicacy Macaroni and Cheese. Okay, maybe not everyone is aware the Thomas Jefferson served Macaroni and Cheese at a State’s Dinner in 1802, but we do think Mac and Cheese.

There is a lot of bantering that abound regarding the roots of Southern Fried Chicken. One thing that most agree upon is that frying chicken is Scottish, dating back long before the Highland Clearance of the 1700s. Highland Clearance is exactly what it sounds like – a mass eviction and relocation to the 13 colonies. Most of the Scots and the Irish settled in South Carolina and Virginia. Some came as indentured workers, others as Plantation owners.

Today is National Hawaii Day. It’s also National Bikini Day. Hum, how fitting is that? While I don’t know how today was chosen for Hawaii Day, I do know that on July 5, 1946 the two-piece bathing suit hit the beaches for the first time. I’m just tossing that little tidbit out there. I can’t exactly build a recipe around a Bikini Theme, but I sure can for Hawaii.

Everyone knows that today in Independence Day – America’s Birthday. I’d like to think there will be backyard barbecues and families celebrating together. I hope children will write their names in the air with sparklers and that night sky will be filled with bursts of color. Happy Birthday! And after this year’s insanity, we deserve a celebration of our Nation’s Independence.

Today is National Eat Your Beans Day. All things considered, it’s a fair question – have you had your beans today? I don’t know about the rest of the world, but one of the first things that vanished from the grocery store shelves, besides toilet paper, were beans. Canned beans in particular, but dried beans as well.
