Next Up – Father’s Day Barbecue
One more week and counting. Now that we live in another town, holidays are especially meaningful. Never take your family for granted. A few years ago, Father’s Day with dear old Dad was celebrated on Saturday. Dad’s not getting about as he once did and that year he was fearful to venture from the family farm. Just as well, I enjoy the farm.

Bayou Country is Calling Me

That’s not a reflection on the great state of Louisiana, I’ve just never been there. Yet, for reasons I have never understood, every June I get a hankering way deep down inside my soul for bayou country. I hear Credence Clearwater Revival playing in my head.
Lazy Man’s Super Easy Citrus Tequila Flank Steak
One of my blog followers is my dear, sweet Hubby. It’s nice to have his support. The day after my birthday, he said he was surprised that there was no mention of his gift to me. It wasn’t that he needed the public acknowledgement, but rather he was surprised that something I had enjoyed so very much received no mention. Let me tell you, it was an awesome gift! It’s also something I couldn’t share in photographs. No cameras allowed once the the show got started. Hubby took me to see the Beatles tribute group, Rain. What a show! It was more than two hours of some of the best Beatles cover music ever. And in that time, I relived my entire youth. Thank you, Hubby, for the best birthday ever!

Almond Chicken with Apricot Sauce
One of the things I really like about our new “old” digs are the almonds. We live in a community surrounded by almond trees. There’s even an almond festival and an almond parade and all things almond. Do you have a bottle of almond extract in your pantry? Go get it, open the bottle and take a big whiff. Do you smell that sweetness of the almonds? That’s what it is like to step outside in the spring, when the trees are in bloom.
Wedge Cut Garlic Fries to Rock your World
Steak dinners are amazingly versatile. Dress it up, dress it down. It doesn’t matter if you are wearing fancy duds or jeans and your favorite pair of boots, the steak is what you make of it. Take a Rib Eye Steak served in a wine reduction sauce with Fire Grilled Asparagus and that’s fancy stuff. Serve up a Grilled Rib Eye with Jack Daniel’s Sauce, plate it with creamy mashed potatoes and sautéed vegetables, and it’s a whole different steak. Get down to the Cowboy Way of doing things and you’ll want to dress it down while keeping everything awesomely delicious.

Pan-Seared Scallops with a Tomato-White Chocolate Beurre Blanc
Today is my birthday. So indulge me here . . . Hubby suggested we go out to dinner. For me, going out to dinner is a problem – when it comes to food, I have very expensive, elaborate tastes. In our little neck of the woods, there are no Five-Star French Restaurants. I’m not sure we have any Five-Star restaurants close by. I suppose we could drive to San Francisco and splurge with a ten-course supper at Quince. Both the menu and the price are fixed – oh bother!

Strawberry Spinach Salad with Candied Walnuts
This year we have planted our very first strawberry plants. I wish I could brag and say that the berries in this awesome recipe came from our garden. While we are producing beautiful berries, as soon as they ripen, my guys are out in the garden having a snack. Maybe next year, when the novelty of eating berries right off the plant has worn thin, I might get enough to really work with in the kitchen.

Brick House Spatchcock Grilled Chicken
I’ve noticed something while strolling through the meat section of our local markets that I find amusing. From the well-stocked chain stores, to the mega box stores and every kind of market in between that there is a new kind of chicken to be had in the meat section. It’s a Spatchcock chicken. Some have been rubbed with seasonings, others have slices of citrus tucked around them, while still others are draped in herbs such as Rosemary and Thyme. All are twice the price per pound of a regular whole chicken. I really don’t think that little sprig of herb or some spice or slices of citrus are worth the asking price. So it must be the chicken, right? After all, it’s a Spatchcock chicken – a special breed, right? It must be. This new bred of chicken has no backbone so as to spread out flat on a Styrofoam tray.

Classic Steakhouse Father’s Day Supper
Hubby likes eating at a good steakhouse. You know the kind I’m talking about, with baskets of warm bread brought to the table while you decide which of a zillion different steak options you are in the mood for. The menus look like small phone books with page after page of dining choices. When the bread runs out, no worries because there are buckets upon buckets of roasted peanuts still in the shell to keep you occupied. Just crack ’em open, toss the shell on the floor and pop those addictive nuts into your mouth. I don’t know how it is in your family, but with mine we are so full of bread and nuts that the meal itself is an after thought. Maybe there should be a restaurant that serves only warm bread and peanuts in the shell. Oh wait, those are called saloons!
