Do you ever look at pictures of food and figure out a new recipe just from the picture? I wanted something different – something light. That’s when I saw a picture of what appeared to be berries and cake on a bamboo skewer. How utterly simple!

Hubby wandered into the kitchen and wanted to know what we had planned for dinner. The man drives me nuts sometimes. I print out a schedule every Saturday morning before we go to the market of the week’s planned meals and stick it on the refrigerator door right under the schedule of weekend events in our area. He manages to notice if there’s a car show nearby on any given weekend, but not what we’re having for dinner on any particular night. We all have our priorities, I suppose.

When traveling, you end up eating in restaurants. Whenever possible, we avoid the big chain establishments, looking for the local Mom and Pop smaller establishments. After all, you can eat at Denny’s anytime. Now there are exceptions – Shari’s is one such exception. For one thing, Shari’s isn’t on every corner. The first time we ate at Shari’s was in Idaho. The food was awesome, the service friendly and the pie selection was amazing. In Oregon, Shari’s are almost as common as Denny’s. At least in the larger towns. Their fruit pies and cobblers are made with whatever is in season. In the summer they serve up a great Blackberry Cobbler.

Do you have a pet peeve? Something that really makes you crazy? I have more than I can count, although after 30+ years of being married to a man who bravely pokes fun at all my petty pet peeves, I’ve learned to let go of a few. Hubby would do things like eat a salad with a dinner fork just to teach me that the world was not going to go spinning off to some etiquette hell because of it. And then there are those pet peeves that do matter, and we need to speak up.

June 30th is National Mai Tai Day! Did you know that once upon a time, The Zombie was the Cosmopolitan of its day. In a way, the Zombie paved the way for the Mai Tai. It was the Zombie that put Tiki drinks on the map. Then, in 1959 Hawaii became a state and the islands became a tourist Mecca almost overnight. Americans flocked to luaus where they were served a fruity tropical drink called the Mai Tai. Thanks to the tourist industry and Luaus, that rum-kicking Mai Tai knocked the Zombie off its Tiki Pedestal.
Sparklers and Skewers – That’s Celebrating!
The idea of a themed barbecue revolving around grilled foods on a skewer is one I had been kicking around for a while. Then one year while getting ready for a big 4th of July cookout, suddenly a light came on. How could I have been so blind! We’ll be firing up our backyard grill anyhow – why not cook everything on a “fire stick”?

If you are thinking spicy breakfast Enchiladas, this is not the one for you. It you are thinking rich and flavorful, then you have come to the right place. My recommendation is to start early because there is a lot of prep work with a long bake or create the Enchilada Casserole a day in advance. Then all you need do is let the casserole come to room temperature, bake and enjoy.

Spicy Firecracker Jalapeno Burgers to Light Up Your Taste Buds
These burgers are big – packed with flavor and VERY messy! You might want to consider handing out bibs when serving – I kid you not. I’ve actually thought about investing in those disposable lobster bibs that they hand out in restaurants. The chunky salsa gives the burgers a nice kick. And that “surprise” in the center – oh my! The guacamole lends a creamy finish, while the nacho cheese sauce just oozes out everywhere.

A Red, White and Blue Feast with Something for Everyone
For your consideration, I have opted to forego the usual 4th of July Parade of hamburgers, hot dogs, potato and macaroni salads. Instead, I’m thinking more along the lines of a “grown up” feast. Of course, you can always throw some burgers and dogs on the grill for the little ones.

Company’s Coming? Then It’s Slow-Cooker Pork Ragù
This is a great meal. Not something you throw together in the crock pot on your way out the front door in the morning, it does need a little prep work and some tending toward the end, but still you’ll have plenty of free down time. I love down time – it let’s me clean the kitchen and set the table and do all sorts of domestic things before supper time including selecting a nice bottle of wine.
