Thomas Jefferson, the 3rd President of the United States, was born on April 13, 1743. Jefferson served as minister to France, Secretary of State in Washington’s Cabinet and ran for President for the first time in 1796. He was elected Vice President to his opponent, John Adams, due to a major flaw in the Constitution. It seems that back in the early days, the winner of the presidential election became President, the second runner-up Vice President. You can imagine how that opened the door to all sorts of problems.

Did you know that in addition to being a whole slue of National This and That Day, today is also National Colorado Day? I think it’s great for every state in the union to have their own “National” Day. It would be a great teaching tool. When Kiddo was a wee kid, he was both home-schooled and publicly schooled. I believe that every day presents an opportunity to educate our children.
Grilled Cheese Sandwich Croutons for Soups
When I talked with Hubby about National Grilled Cheese Day and wouldn’t it be neat to make Grilled Cheese Sandwich Croutons for Tomato Soup he looked at me as if I just landed from Mars. Why, he asked, can’t you just make a grilled cheese sandwich that we dunk in our soup? Because, I explained, making little sandwich croutons are cute. It’s different, and I like different. My mother always told me not to play with my food. I guess I never learned.

What’s that you say? A Taco Bell Burger? Believe it or not, from the mid-1960’s to the mid-1970’s Taco Bell had their own take on a burger. The Bell Burger aka Bell Beefer was nothing more than their Taco meat between two buns with a kiss of Taco Sauce. It was a sloppy Joe of sorts with grated cheese on top. Originally the Bell Beefer did not include taco lettuce. However; if you knew what to ask for, shredded lettuce and diced tomatoes could be part of the deal.

On the National Day Charts, today is an interesting day. National Barber Shop Quartet Day. I’m not a member, I don’t know anyone who is a member, and in checking the community calendar, there doesn’t seem to be a performance nearby. What else have we got to choose from?

I know you were expecting some sort of Lenten offering on this, the 31st day of the season. I got side tracks. All I can say is welcome to my mind. To the rest of the world, it might seem a dysfunctional, easily derailed environment. Yet for me the thought process works and it does make perfectly logical sense. Hubby would care to differ. I invite you to follow the thoughts that led to today’s posting to a wonderful, First-Class Asparagus “Salad” served on the final night aboard the Titanic. Although not a straight line, the string of thoughts aren’t totally random. Ready, set . . . here we go.

Wake up to Cinnamon Crescent Rolls
Did you know that cinnamon is a good source of manganese, fiber, iron and calcium? I love cinnamon in my coffee, on toast, in an apple pie or today sprinkled on Crescents. It’s a good thing, too because today is National Cinnamon Crescent Day. Now if your mornings are like mine, making a big breakfast before the men folk head out the door isn’t always possible. This takes almost no time. Served with some fresh fruit and tall glasses of ice cold milk, it’s like sending them out into the world wrapped in a big hug.

Ginger Ale Fish and Shrimp Fry
Whenever we are traveling and want to grab a quick “fast-food” bite that isn’t the usual burger, Long Johns is always a popular choice. Hubby loves their golden fried fish, plump fried shrimp and a basket of French Fries. With enough Malt Vinegar, even Kiddo doesn’t mind a piece of deep-fried fish.

We are fast approaching the end of the Lenten Season. In less than a week, we will celebrate Palm Sunday, and the beginning of Holy Week leading to the joyful celebration that is Easter Sunday.

Greeting one and all! How are you on this fine day, the 29th day in the Lenten Season? As promised, I have for you another delicious recipe void of pork, beef or chicken. The pretty much leaves us with ingredients grown from the ground or swimming in the waters somewhere.
Crab Oreganata in a Scallop Shell
Don’t you just love these shells? I know I do. I like anything that is served in something different – like a shell or a hollowed out coconut bowl or bread or pineapples. We once ate at a restaurant that used pineapples cut lengthwise and hollowed out to serve rice, sweet and sour pork or teriyaki chicken. It was awesome! I want to try a backyard tropical party with pineapples as serving platters and drink cups. I think that would be fun, don’t you?

Grilled Tequila Lime Chicken Thighs
The closer we come to May, the more my thoughts wander to Cinco de Mayo. One of the best Cinco de Mayo parties Hubby and I ever hosted was while we were living in Las Vegas. Our Southwest home was in a gated Pueblo housing development. All the homes were custom Pueblo-Style homes. The community had a private park perfect for hosting block parties for the entire neighborhood. Most of the time, Hubby and I did all the cooking. I’m not sure why community parties tended to come down to us acting as hosts, except to say we had a natural knack for throwing great parties. Everything from the “theme” to the decorations to the food – we are very detail orientated. Okay – I will admit I tend to be a bit of a control freak. I have a vision as to how something should be and the drive to see it through. Wow, that sounds bad.
