Fridays were reserved strictly for Fish or Seafood, the rest of the week something meatless (like cheese pizza). The one exception was Sunday Supper, since Sundays are not counted as part of the 40-Days. Even then, I made attempts to limit the meat consumption.

Soup It Forward Day
Today in National Soup It Forward Day. The purpose of the day is to remind us that when we make a big pot of comforting soup, share it with others. We are suppose to be encouraged to deliver soup to those in need, be it due to illness, down on their luck or going through something difficult. The concept is lovely.
Instant Pot Chicken Adobo
As many of you know, Hubby gave me an Instant Pot for Christmas this year. The first week that I had it, the poor pot sat in the corner of my kitchen while I figured out what to do with it. New Years Day was Ham and Beans made with the Instant Pot. Wow!
Cheater’s Chicken Mole Update
This must be the time to be re-tweaking some recipes from the past. One of Hubby’s all-time favorites has to be Chicken Mole. Way, way back when on a very early “date” in our marriage, he took me to this hole-in-the-wall place that had some of the best Mole on the planet.
It’s Minnesota Day!
The first of March gave us plenty of National Days to pick from. Dadgum That’s Good Day, Fruit Compote Day, Peanut Butter Lover’s Day and National Pig Day just to name a few. Although I think it would have been in poor taste to roast a pig on a day set aside to honor the intelligence of the pig.
A Family Affair Sunday Supper
Growing up, my Dad did a lot of the cooking when it came to Sunday Suppers. He was the one in charge of the Turkey for Thanksgiving or basting the chicken for our Sunday Feast. He made the mashed potatoes, and that man can make gravy from nothing. Mom was more in charge of the “mood” – setting the table just so, putting the little touches in place. When you walked into the room, it felt warm and inviting. I’m glad that they each did their roles so well because I can do both.

Those of you who have been following along for a while (and I thank you), you know that Hubby and I have been a couple for over 30 years. We met at a job interview, I got the job, three weeks later we went on our first date. The date turned into five days of blissful insanity with us saying “I do.” Hey, when it’s right, it’s right.

Chocolate Heaven!
I don’t really remember the first time I ate a soufflé. I do recall the most unusual place – a giant claw-foot bathtub in an old Victorian Hotel. Hubby had ordered soufflés from room service, and I had decided to take a bubble bath. I gotta tell you, I don’t care what sort of a Chef you think you are, never include a soufflé on your room service menu. Something definitely goes wrong in transit. And by that, I don’t meant it’s fallen.
