What an awesome day to be in the kitchen! It’s National Lobster Day and National Quesadilla Day. Originally my plan was to go with Quesadilla and serve up my delicious Chicken Quesadilla. But then a light came on – duh!

Is the Great American Pot Pie Really American?

Today is the Great American Pot Pie Day. Ask my husband and he will tell you emphatically that a true Pot Pie is made with both a bottom and top crust. It’s the way he grew up. We didn’t eat much in the way of pot pies except an occasional Swanson’s TV Dinner Pot Pie. Back then, I wasn’t a fan of cooked carrots or the texture of frost-bitten peas, so I ate the top crust, then picked out all the vegetables before eating what was left.

The Flavors of New York State

Today is National New York State Day. Did you know that while New York sent three delegates to the Constitutional Convention in 1787, only Alexander Hamilton remained to sign the final document? Interestingly enough, Hamilton was a Federalist that believed for a President to effectively govern, he should be elected for life. By removing campaigning from the office of Presidency, Hamilton believed politics would also be removed. He felt the Senate should also be a life-term appointment. Since there are no term limits in the U.S. Senate, life terms are possible.

In an Instant, It’s All in The Wok

Today was one of those days when it was nearly impossible to pick which delicious day to celebrate. Now I know in the past when I’ve found myself in such a pickle, I’ve managed to bring it all together. But not this time around.

Gotta Go Big or Go Home

I know what you must be thinking – another Burger Recipe? Really? Hey, it’s not my fault that Double Cheeseburger Day and Cheeseburger Day happen to be days apart. And as for the Guacamole thing, that was just a good excuse for another burger.

Meatball Sub Skillet Supper

One of Hubby’s favorite hot sandwiches has to be a meatball sub. Truth be told, I don’t think I make meatball anything often enough to suit him, let alone a meatball sub. I’m not really sure why. Maybe it’s the red sauce thing.

Guacamole without the Chips

Did you know that Avocados, the key ingredient in Guacamole, were first cultivated in South Central Mexico around 10,000 years ago? The Aztec people created Guacamole as a tasty way to consume Avocados, believed to be an aphrodisiac.

Sometimes You Gotta Have Junk

Before we get to today’s recipe share, I just need to take a moment to acknowledge the day from a purely Catholic Perspective. Today is the Feast of Our Lady of Sorrows. Mary was given this title to honor her suffering as she followed her Son to his crucification. There are too many mothers in the world who have lost their sons to violence. It really doesn’t matter if the violence is justified or not, a mother’s loss is no less real. May our Blessed Mother comfort all mothers in their time of sorrow.

The Flavors of Virginia

Today is National Virginia Day. It is also Eat a Hoagie Day. When I first set out to write this post, I thought I’d figure out a way to Eat a Hoagie in Virginia. That is until I began to research menus and recipes from a few famous resorts and dinners throughout the state. Virginia beckoned me in a whole other direction and I gladly followed.

More Than Just a Cherry On Top

Today is a whole slew of various National Days. There’s National Video Game Day. I suppose that would have been a good day to celebrate before the insanity of 2020. Now, video games might just be something we have had enough of, seeking real games with actual contact instead. It’s also Nation Day of Encouragement. After the National sadness of September 11, a day of uplifting encouragement is like a welcome breath of fresh air. Maybe we should declare every day as a day to encourage one another. How great is that?

September 11th

There’s really no introduction needed for September 11th. It’s a day etched into the collective memories of anyone born before 2001. It is Kiddo’s assassination of JFK or my father’s Pearl Harbor. Unless you lived under a rock, you know the significance of the day. And it’s sorrow touched you.
