Today is National Spumoni Day. You know Spumoni – that delicious frozen treat which hails from southern Italy. Traditionally, Spumoni is three molded layers of gelato to create one uniquely delicious dessert. Traditionally, one layer included candied fruits (most often cherries), one layer with nuts (usually pistachio) and the third layer is luscious dark chocolate.

When I first crossed that fine line from borderline Diabetic to Insulin Injections, I went in search of all things diabetic in an effort to change our entire eating habits. As far as making a complete transformation, cutting out all sugars and carbs and unhealthy refined food from our table, I will admit I failed. However; the search did lead to discovering dishes that are delicious and deemed diabetic friendly that I have incorporated into our diet. Moderation is the true key to success.

According to Catholic Teaching, at the end of her earthly life, Our Blessed Mother Mary was assumed, body and soul, to Heaven. Catholics worldwide celebrate the Feast of Assumption on August 15. It is a Holy Days of Obligation, one of five or six (depending upon the calendar) throughout the year in addition to Holy Sundays. The Feast of the Assumption is a public holiday in 43 different predominantly Catholic countries.
