As luck would have it, this year Hubby’s birthday fell on a Tuesday. For those of you who have been around a while, you know what that means. In our house the theme for Tuesday is Tijuana Tuesday and Hubby’s favorite cuisine is Mexican. Perfect for his special day.

Woven into the tapestry of Connecticut’s historical landscape are revolutionaries, innovators and philosophers. Today we celebrate the fifth state to join the newly formed American Union.

Are you a fan of Spinach Dip? I can’t remember the first time I had spinach dip at a party. I can’t remember a party without it. First there was the dip in a festive bowl surrounded by baguette slices, then came the hollowed out bread bowls. And now this . . .

Today isn’t just any old National Day, it’s a Global Day. Wow, now that’s special. It’s Global Sleep Under The Stars Night. You don’t need to travel to a remote spot or hike out into the woods. Set up a camp in your own backyard, or the terrace of your apartment. Anywhere that you can look up at the night sky is fine. Gazing up into a star-filled sky brings a calming peace and an overwhelming sense of awe bundled together.
Continue reading “Oh To Slumber Under the Stars!”A Lighthouse Supper to Remember
Today is filled with National and International Days I need to acknowledge. There’s Purple Heart Day and Raspberries in Cream Day (oh yum). It’s also the first Friday in August, which gives us International Beer Day and that goes well with National Water Balloon Day. Think about it – a warm summer’s day, a few beers too many and water balloons – a deadly combination!

According to the National Calendar, today we are to wiggle our toes, preferably in the sand. Breath in that sweet salty sea air. Feel the fading warmth of a setting sun. Savor the moment before the day is but a memory.

I gotta tell ya, this was one of the most difficult dishes to make. And not for the reasons you might think. The first time I had this one-pot wonder on our meal planner was the day after restaurants closed for the second time in California. Don’t ask me why, but I felt very rebellious. Fine, if we can’t eat out, I won’t cook at all was my attitude. We can starve. That in itself made no sense since we don’t eat out very often. It was just frustrating to have options removed.
Continue reading “One-Pot of Deliciousness!”Happy National Chocolate Chip Cookie Day
Today is a very special day for two very special reasons. It’s National Chocolate Chip Cookie Day – oh yeah! And it’s Hubby’s birthday. What better way to celebrate National Cookie Day and Hubby’s birthday than to bake up a giant Chocolate Chip Cookie for his birthday.
Continue reading “Happy National Chocolate Chip Cookie Day”Sweet Georgia Day
Today is National Georgia Day. When we think Georgia, we tend to think deep south and all that Southern culture brings to mind. We think cotton fields and the burning of Atlanta. Yet there is so much more to this the 13th colony and 4th state to enter the Union. She is a land of contradiction.
Continue reading “Sweet Georgia Day”Ode to Southern Brine Fried Chicken
Decided to share this recipe today rather than tomorrow was a tough choice. Today is Sunday. Sundays and chicken dinners just naturally go together. Chicken dinners and family just naturally go together. Today is all about togetherness. It’s National Family Day, National Friendship Day and National Sisters Day. All great reasons to enjoy Southern Fried Chicken.

Have I mentioned that my absolute favorite meal of the day is breakfast-brunch? Pastries and pancakes and all sorts of wonderful things. If I could eat only once, it would be the morning meal. And if I had it my way, that meal would last all day.
Continue reading “Mexican Brunch on a Plate”Won’t You Have a Seat?
Unlike July’s table that just seemed to scream right through the photo “Wow – look at me!!!”, the tablescape for August is more subdued. It’s one of those tables you need to take a seat at to appreciate all the little things.
Continue reading “Won’t You Have a Seat?”Summertime is the Ripe Time
Welcome to August. For those of us in the Northern Hemisphere, it’s the first day of the last month of summer. Okay, so summer doesn’t officially end until September 22 this year, but we don’t think “summer” in September. Back in the day, September meant the start of the school year, and that spelled the end of summer.

Today is National Avocado Day. Have I mentioned that I love avocados? Avocado toast, avocado salad – avocado everything. Must be why last year I shared an entire Avocado Menu.

How’s life been thus far? I think, if we could have a do-over year because it was such a mess, 2020 would be at the top of the list. It’s not just the pandemic, it’s all the craziness.
