Old Fashion Ice Cream Soda

Can you believe it? Summer!!! At least for those of us in the Northern Hemisphere. Makes me want to eat Popsicle and drink from a garden hose just like I did as a child. I can remember gathering up some of the newspapers stacked in the garage, and using them like Papier-mâché. We dug a hole in the ground, lined it with layers of wet newspaper  to create a “pool”. Once filled, my brother and I could float our Popsicle-stick Sailboats across our man-made sea.

Beer-Batter Fish with Green Chile Tartar Sauce

I grew up eating Cornmeal Coated Fried Catfish. It was the only fish I knew that didn’t come from a can such as tuna or salmon. It wasn’t until the Fast-Food Chain, Long John Silver, opened in our neck of the woods when I was in high school that I had even tried battered fish.

Alfredo Smothered Chicken

Do you like bacon? How about Pesto? And Alfredo? If you said yes to all three, this is a dish for you. Alfredo Sauce all on its own over chicken is delicious. Add to that the creamy herbs of pesto and the smoky crunch of bacon bits, and you are talking beyond delicious.

Sizzling Chili Biscuit Pot Pie Casserole

If you have been with me for a while, you know that I don’t always follow a recipe. Sometimes I’ll switch out an ingredient or make other changes that are better suited to our family, our circumstance and tastes. That is not to say it’s better for everyone, just better for us.

Nacho Chicken Casserole

I don’t know about you, but I love the idea of casseroles. Everything you’ll want all piled in a single dish. Maybe add a side of salad or some warm rolls, and there you go – dinner in a snap. And just about anything can be transformed into a delicious casserole.

Beef Burgundy over Egg Noodles

For many Americans, Campbell Soup is a part of everyday life, and with good reason. In 1869 a fruit merchant and an icebox manufacturer started a canning company in New Jersey. Joseph Campbell and Abraham Anderson canned tomatoes, vegetables, jellies, soups, condiments and minced meats. Anderson left the partnership in 1876. Campbell Soup Company went on to become one of the largest food companies in the world.

Welcome to the Land of Enchantment

Smoked Paprika Spanish Chicken

I’ve picked this recipe to share today for two very good reasons. First, with the exception of some slices mushrooms and green onions, there isn’t much in the way of “dangerous” prep work involved. Secondly, Spain has a heavy influence in California cuisine.

Louisiana Shrimp Etouffée 2

While I’ve never been to Louisiana, I do love the food. Maybe it comes from my southern roots via Pops. Maybe it is that love of spice and flavor and anything down home. All I know is that while I’ve never been to Louisiana, I feel deeply connected to the Gulf region.

Upside Down Meat Lovers Pizza

Have we ever talked about Pizza? As a kid, I loved Pizza. It was such a treat when we loaded up the family station-wagon and headed down the road to Pizza Hut. Big pitchers of Root Beer and that to-die-for Pepperoni Pizza. To this day, when it comes to pizza I gotta have Root Beer.

Over the course of our marriage, Hubby has introduced me to a lot of different things. One was an appreciation for Jimmy Buffet. One of the best concerts we’ve attended was a Jimmy Buffet show in Las Vegas.

D-Day – The 6th of June

On this day Seventy-Six years ago; the planned D-Day invasion was launched. I had always thought the “D” meant Do or Die Day. It fits. As it turns out, the “D” in D-Day doesn’t stand for anything in particular, at least not a stand-in for a word. V-E Day is short for Victory in Europe Day; V-J Day means Victory over Japan. But the “D” in D-Day is just a letter.
