Fried Chicken Adobo for Crispy Goodness

Often my Dad talks about how my Mom would fry her Chicken Adobo to finish it off, and that he liked it that way. When she fried the chicken, it was straight from the simmering pot of Adobo sauce straight into a skillet of hot grease. The chicken boiled over and sputtered and just made a huge mess. Dad said Mom would cover the stove top with newspaper to deal with the oil spill.

The Beauty of Italian Slow-Cooked Mushrooms

Let’s talk mushrooms for a moment, especially since mushrooms are at the heart of this dish. Did you know that white button mushrooms and Cremini mushrooms are actually the same species of mushroom? Yeah, me either.

Citrus Kissed Scallops with Pepper Strips over Pasta

For whatever reason, we’ve been in a Pasta-Scallop frame of mind. Hubby is a big fan of Scallops. I really don’t think I had ever tasted a scallop before marring him. And to be honest, the first time I tried scallop anything I was not thrilled. So what changed?

Perfectly Delicious Mushroom-Pea Risotto

Risotto is something new to me. By new, I mean it’s something I began preparing at home in the last ten years. What? That’s new? When you consider I’ve been a home-cook since the early 1970s, ten years is “recent”.

One-Pan Complete Rosemary Chicken Supper

Who doesn’t like an entire meal that cooks up in a single pan? I know, there are plenty of one-pan wonders out there. What I like about this one, aside from the convenience of a single pan, is that the vegetables are some of my favorite.

Simple Onion-Garlic Drumsticks

Sometimes the most simple meals are the best. After all, simple does not mean one-dimensional. What makes food worth eating are layers and textures and aromas. How do we eat? With our senses fully engaged – with our eyes and our noses long before that first bite.

Let’s Celebrate Life Every Day with Cupcakes

When it came to a recipe to share, I really struggled with something new. Whenever I’m feeling less than inspired, I like to check out the National Calendar to see what the day has in store. It’s Moldy Cheese Day – doesn’t sound appetizing. And then there’s Pizza and Beer Day. Except I’m not a big pizza fan nor do I drink beer. So what else . . .

Old Fashion Chocolate Pinwheel Cookies

Growing up, one of the things I always looked forward to was Dad’s Holiday Baking. The man would begin baking cookies in mid October, and keep them frozen until Thanksgiving. From Thanksgiving to Christmas, we had more cookies than you could imagine. Cookies and fudge and pies and all sorts of holiday delights.

Supper Time is Fun Time with Taco Biscuit Cups

Taco Biscuit Cups are super easy to make, fun to eat and unbelievable filling. One or two “biscuits” is more than enough for even the largest appetites. My guys loved them. Hubby said he could eat Taco Cups several times a week. They are that good.

Feast of Our Lady of the Rosary

It’s another feast day within the Church.  October 7th is known as Our Lady of the Rosary or Our Lady of Victory. This Feast Day was intended to honor a 16th century Naval victory that secured Europe against a superior Turkish invasion. If you want to learn more and have a wonderful meal, stick around. If not, that’s okay too.

Slow Cooker Chicken Thigh Noodle Soup for Grownup Tastes

Today is National Noodle Day. Noodles have been around since the beginning of time. Okay, that’s not entirely true, but in China an earthenware bowl containing some well preserved noodles has been dated to 4,000 years old. Wow, that’s some old noodles!

Autumn Apple Chicken Thighs

Do you know what I love about soups? Oh sure, there are the obvious reasons – delicious, comforting, cozy. But then there are the other reasons, such as presentation. I love my soup tureen. I love having Bouillon Spoons in my flatware drawer. And I love those cute little soup bowls with handles.

Swirling Pizza Roll for Fun

Why can’t we have pizza for dinner? Is that something you hear in your house? My guys love their pizza. I am not a fan of ordinary, pedestrian pizza. If I am going to have pizza, it needs to be  with attitude.

Orange and Spice and Everything Nice Roast Chicken

Don’t you just love the way cooking changes with the seasons? Sure, in the modern age, we aren’t necessarily limited to “seasonal” ingredients. You can get an apple or an orange any time of the year. It isn’t so much what we cook but how we cook that changes.
