Today is National Quiche Lorraine Day. Did you know that Quiche Lorraine is the original form of quiche, from the French region of – what else – Lorraine. If you knew that already, then like me the chances are you were wrong. During medieval times, the Germans in Lothringen had an open pie, the Kuchen. The word Kuchen eventually became Kische. When France conquered Lothringen, they lay claim to the German’s Kische, renaming the dish Lorraine and changing the spelling of Kische to the more standard French spelling, Quiche.

Sautéed Italian Broccoli with Onions

Lately I’ve been serving up a lot of Broccoli without all the rich sauces and tons of butter. I really like broccoli kissed with seasonings and a little spark of Red Pepper Flakes. Yeah, it’s really darn good eating! It’s not often that something we enjoy eating is also good for us. I wish say Chocolate Cake for example had the same health benefits as a plate of broccoli.

Cheater’s Macaroni Salad

A little while back, while planning out my family’s dinner menu, I was struck by the idea of a picnic. It’s been a long time since we had a picnic simply for the sake of having a picnic. You know what I’m talking about – loading up the family car and heading out for a drive. Maybe drive along the coast, or up into the hills or just a nearby park. Spread out a blanket, and relax. No big events. No schedules. No distractions. Just quality family time under the shade of a big tree somewhere. So I pulled up our schedule. We love attending little county fairs, street festivals, antique gatherings, and stepping back in both time and space to Celtic or Renaissance gatherings. In March, we attended our first every Civil War Reenactment. It was awesome!

Slow-Cooker Barbacoa

Just what the heck is Barbacoa? Is it a dish? Is it a style of cooking? Barbacoa is actually a Spanish word that means – you guessed it – barbecue. It’s actually not Spanish in origins, but rather a type of cooking that originated in the Caribbean with the Taino people. Today in contemporary Mexico, Barbacoa generally refers to meats or a whole sheep that is slow-cooked over an open fire, or more traditionally, in a hole dug in the ground, then covered with Maguey leaves much like a roasted pork in the tropics of the South Pacific. Barbacoa is often prepared with parts from the heads of cattle, such as cheeks, or from the heads of goats. In central Mexico, the meat of choice is a lamb, and in the Yucatan, it is prepared with a pig. The meat is known for its high fat content, strong flavors; often accompanied by onions and cilantro.

Buttermilk Cheddar Bay Biscuits

Biscuits, unlike leavened breads, use baking powder or baking soda as the leavening agent rather than yeast. The “rise” is quick, achieved in the oven rather than the long wait of traditional breads, which explains why biscuits are often referred to as “quick breads”. The beaten and folded dough of biscuits incorporates air, and the air, along with the gases of baking powders or sodas, expands while baking, causing the biscuit to rise.

Portuguese Feast to Honor Our Lady of Fatima

Today marks the Feast Day of Our Lady of Fatima. For those who are Catholics, this is a familiar story taught in Catechism to strengthen our devotion to the Rosary. For those less familiar, let me take a moment to give you a little background. Our Lady of Fatima is a beautiful story of faith. As with all appearances of Our Lady, it is only faith that lets one believe.
