Seems I’ve been in a Penne State of Existence lately. Yesterday with our Slow-cooker Chicken Cordon Bleu, and now today with a family favorite – pasta in a meat sauce. The nice thing about pasta dishes is that left-overs warm up nicely for a second bite.

It’s been a month since we’ve done anything even remotely “Cordon Bleu”, and Kiddo has been clamoring for Chicken Cordon Bleu. Every time we plan out a menu together; he suggest Chicken Cordon Bleu. I keep deflecting. Maybe it’s all this day in and day out of cooking two; three or more meals a day that is making me so darn lazy. Maybe making traditional Cordon Bleu is just too much work.

Best Darn Taco-Margarita Bar in Town
Let’s start with mixing up our own Taco Seasoning, making our own Chorizo and then putting out a build-it-your-way Taco bar. Who needs restaurants to be open? A restaurant means you have to put on pants, get in the car and drive somewhere. Depending upon where you live and how “open” things are, that could be a long, long drive. Making a Taco Bar at home doesn’t require any of that. Okay, maybe pants would be nice, but not required.

Don’t you just love foods that you can eat without utensils? Some might say like a pizza, but then I eat my pizza with a knife and a fork. When pizza comes straight from the oven, all that hot cheese and sizzling pepperoni – too dangerous. I can’t tell you how many times I’ve had molten cheese drip down my chin. Actually, most foods I eat with a knife and a fork – or at the very least a fork. How ’bout you?
Returning to a New Sense of Normal
On March 10th Hubby and I traveled up into the Mother Lode to the small town of Sonora. It was a yearly sojourn to attend one of the largest Celtic Festivals west of the Mississippi. This year’s gathering was small and the festival grounds felt more like a ghost town. While the word “pandemic” had yet to be spoken, the fears were already setting in.
