Today is National Nevada Day. Nevada, the Battle Born State, was grated statehood during the Civil War. The only other state to join during the war was West Virginia. Although today is National Nevada Day, Nevada actually joined the union on October 31, 1864.

Italian Spinach Chicken with Penne Pasta

As it turns out, today is National Spinach Day. Now I suppose the best way to celebrate Spinach Day would be to make a Spinach Salad. Sure, that would be good. The problem with a Spinach Salad is that I would be the only one eating the salad. I might be able to sneak in some spinach burred under torn bits of Iceberg Lettuce, but that’s about as close as I could get with my guys.

Sunday Chicken Biscuit Mini Pot Pies

While I can’t speak for everyone, but Sundays seem a bit off now that we can’t congregate for Sunday Services. Now would be a good time for people of faith to pull out their books and spend a little time as a family sharing the word. For me, that’s Catholic. Hey Y’All in West Virginia

Today is National West Virginia Day. When the state of Virginia voted to secede from the Union, Western Virginia clung to their Union loyalties. Those folks created their own constitution apart from Virginia and approached Congress for statehood. West Virginia became the 35th state in the Union, joining as its own entity in 1863.
