Creamy Chicken Thighs Over Cheese Tortellini

Sunday Chicken doesn’t need to be Southern Fried or Roasted. Both are delicious, but sometimes we like to kick back with a creamy one-skillet supper. Easy, relaxed and delicious. This is one of those moments.

Summertime Chicken Cordon Bleu Stromboli

Kiddo is a fan of Chicken Cordon Bleu, as am I. Hubby, not so much. He’d rather eat thighs than breasts. He’s not a fan of cheese stuffed into chicken, but he does like a ham and cheese sandwich. Go figure.

Penne Pasta in a Meaty Sauce

Seems I’ve been in a Penne State of Existence lately. Yesterday with our Slow-cooker Chicken Cordon Bleu, and now today with a family favorite – pasta in a meat sauce. The nice thing about pasta dishes is that left-overs warm up nicely for a second bite.

Risotto Style Pasta with Chicken and Mushroom

Risotto is traditionally a Northern Italian dish made with rice. That makes perfect sense when you realize the Riso means rice. And it’s not just the type of rice that matters, but the way it is prepared that give Risotto its creamy, rich consistence. So what happens to a short pasta cooked the same way?

Shrimp Linguine with Tomato Sauce

Doesn’t this look yummy? Yeah, wish I could take the credit for this picture, but in all honesty, I can’t. As I mentioned before, my poor lap top is in the hospital for brain surgery. Until I have my own system up and running again, I am stealing pictures from the world-wide-web rather than down-load my own pictures. Still cooking, still snapping away, just keeping my pictures for another day. Maybe someday soon, I’ll go back and update with my photos.

Cooking Made Easy

If it’s Thursday, it must be Italian – or whatever Thursday means to you. I know this is going to sound crazy, but one of the ways I’m keeping track of the days is with the use of a weekly menu planner. It’s on the refrigerator. I have a little circular magnet that is moved from one day to the next. My family knows what to expect for dinner, and I know what day of the week it is and what I need to prepare.

Buttery Lemon-Pepper Pork Piccata

I love Piccata dishes, no doubt about that. I love the lemon, the wine and most of all the briny Capers. If I had things my way, I’d put Capers on everything. Okay, maybe not everything. I’d have to pass on Caper Pancakes.

Look to Italy on Lenten Fridays

Today is the 5th Friday of Lent. Normally, during this time of the year Catholics world-wide refrain from eating meat on Fridays. This year, for some Catholics in the United States, things are different.

Garlic Vino Balsamic Chops

The flavors are intense, yet these pork chops take almost no time at all to prepare. The Balsamic added a beautiful depth to the finished sauce. And if you are a fan of garlic, be sure to eat the soft bulbs right out of the sauce. Yum!

Sautéed Tilapia with Lemon-Caper Pan Sauce

You learn something new every day. I was about to tell you that this is the 5th Friday of Lent, but I would have been wrong. Sure, it’s the 5th Friday after Ash Wednesday, but apparently when counting Lenten Fridays, that first one doesn’t count because it is not preceded by a Sunday of Lent. Do you have a headache now? So confusing.

Italian Spinach Chicken with Penne Pasta

As it turns out, today is National Spinach Day. Now I suppose the best way to celebrate Spinach Day would be to make a Spinach Salad. Sure, that would be good. The problem with a Spinach Salad is that I would be the only one eating the salad. I might be able to sneak in some spinach burred under torn bits of Iceberg Lettuce, but that’s about as close as I could get with my guys.

Dump-and-Go Meatball Lasagna

Dump-and-Go recipes are great right now for two reasons. First off, many of us have children at home. We have become independent Home-School groups. Taking care of the family while meeting the educational needs of our children takes up a lot of time. Dump-and-Go recipes come together quickly. And that’s a good thing.

Scallopini Sunday Supper

I gotta tell you, when I was originally putting this together, it was going to be all about the Pork Chops. But then I realized this is a lovely Sunday Supper and all I needed to make it complete was to share a few more recipes. How perfect!

Cream of Chicken and Rice Florentine

Why is it that any dish with the name Florentine contain spinach? Maybe it’s because Arab Merchants brought Spinach to Sicily over 1,2000 years ago, and the plant thrived. There are a lot of thoughts on the relationship of Spinach and Florence. Some are very romantic. Any way you look at it, spinach brightens up the plate.

Sausage Broccoli Spiral

Bright, colorful and super easy to make – what could be better? Family meals need not be stressful – we have enough stress in our lives, thank you. A little chopping, a can of tomatoes, and there you go.
