Italian Marinated Grilled Chicken Thighs
Here is yet another awesome recipe plucked from a prior post, Entertaining with Italian Flair for your consideration. Now that Memorial Day is behind us and the grilling season is “officially” here, it seems a good recipe to share. After all, nothing says summer than food from your grill.
Angel Hair Pasta Pomodoro
It’s interesting to me how reading a recipe can inspire an entire meal. When I read this recipe, two things sprang to mind. First, I cannot wait for my beefsteak tomatoes to be ready to harvest. Secondly, I miss my little Italian restaurant that served spaghetti in a marinara sauce as part of your meal no matter what you ordered. While this is made with Angel Hair Pasta, it reminded me of that long gone place.
Italian Cannoli Cake
Leave the gun, take the Cannoli. What could be more Italian than a Cannoli? While I can think of a lot of things, none is more delicious or closer to my dessert loving heart than Cannoli.

Sautéed Italian Broccoli with Onions
Lately I’ve been serving up a lot of Broccoli without all the rich sauces and tons of butter. I really like broccoli kissed with seasonings and a little spark of Red Pepper Flakes. Yeah, it’s really darn good eating! It’s not often that something we enjoy eating is also good for us. I wish say Chocolate Cake for example had the same health benefits as a plate of broccoli.
National Shrimp Scampi Day
On this day, we honor the deliciousness of shrimp sautéed in butter, garlic, lemon juice and white wine. Oh my stars, can the day get any better?

Don’t you just love these shells? I know I do. I like anything that is served in something different – like a shell or a hollowed out coconut bowl or bread or pineapples. We once ate at a restaurant that used pineapples cut lengthwise and hollowed out to serve rice, sweet and sour pork or teriyaki chicken. It was awesome! I want to try a backyard tropical party with pineapples as serving platters and drink cups. I think that would be fun, don’t you?
Italian Lemon Grilled Tilapia Piccata
Didn’t I tell you Italy has some of the best Lenten Dishing going? I love Piccata. I first fell in love with Veal Piccata, then perfected my own take on Chicken Piccata. At Christmas, one of our favorites is Dover Sole Piccata. I’ve even made my Pork Piccata the star of a six course Italian Supper.
Spinach-Ricotta Manicotti
Sometimes my mind works in very strange ways. Take Rome and the Vatican for example. We eat a lot of Italian inspired suppers during Lent because meatless pastas are so darn easy, their seafood dishes are swimming in awesomeness and everything is super delicious. So, is the Vatican in the heart of Rome for the food, or is Italian meatless dishes so doggone good because of all those Catholic Cooks in Italy? I know, it’s a silly thought. The Vatican’s location has nothing to do with the food, but just maybe all those Catholics puttering about in the kitchen has something to do with the food. Just saying . . .
National Ravioli Day, Lent and Cheese Ravioli

Baked Chicken Thighs with Italian Tomato Relish
Is it Sunday already? I had something else in the works for today, but things change. This is an original recipe, sort of. The relish is a recipe I’ve had for years, always used with grilled pork. This time, I thought why not bake chicken and bury the chicken in Italian Relish? My guys thought it was awesome. I thought it was good, but grilled chicken would have been better. I’ll need to play around some more this summer when the old grill comes out of hiding.

Slow-Cooker Alfredo Tuscan Chicken
Good morning everyone. Are you excited about embracing another wonderful day? I know I am. My guys and I had an incredible time at the Celtic Faire (as always), with plenty of grand food, good music and sports. Saint Patrick’s Feast Day is just around the corner. If you’ve been following along, then you know we’ve got some yummy things planned for that day. So what does all this Irish gibberish have to do with Tuscan Chicken? Nothing. I just didn’t want to get too Irished-out before the big feast day.
One-Pot Italian Sausage Creamy Spaghetti
We all love those one-pot wonders, right? When I cooked up this one-pot Italian Sausage Spaghetti, in my mind I was thinking okay, so it’s another spaghetti dinner. Sure, we love spaghetti, but don’t hold the presses for another pot of pasta, if you know what I mean. I liked the idea of everything cooking in my big pot. I liked the idea of warming some bread, tossing a simple salad and sitting down to an effortless supper with my guys.
