Honoring the Buffalo Soldier

Today is National Buffalo Soldier Day. In 1992 Congress set this day aside to commemorate the formation of the first regular Army regiments of African American soldiers in 1866. Following the Civil War, Congress passed the Army Organization Act, creating six all-black cavalry and infantry regiments. It was the first such creation during peacetime.

Spicy Crescent Enchiladas

Rarely do we bake a cake from scratch, although the boxed variety often needs a helping hand. Pie crusts and Dinner Rolls can come in a box, from the freezer or even in a tube. Wow!

Instant Pot Spicy Lime Chicken Tacos

I gotta tell you, every time I use my Instant Pot, I give Hubby a great big kiss. It’s Merry Christmas all over again. Meal prep is so fast. Don’t want fast? That’s okay, it has a slow cooker setting and a saute setting and a rice cooker and the list just goes on and on. I’ve heard tell the Yogurt Setting is perfect for proofing breads. That’s on my to-try list.

Bring on the Flavor of Arizona Day

When it rains, it pours. Or better yet, when there’s reason to Celebrate, there’s plenty to celebrate. It’s Father’s Day, and that’s a pretty big deal. But that’s not all today brings. It’s also Peaches-N-Cream Day, Day of the Gong, Go Skateboarding Day and Selfie Day just to name a few. Aside from Father’s Day, my favorite is that it’s also National Arizona Day.

Best Darn Taco-Margarita Bar in Town

Let’s start with mixing up our own Taco Seasoning, making our own Chorizo and then putting out a build-it-your-way Taco bar. Who needs restaurants to be open? A restaurant means you have to put on pants, get in the car and drive somewhere. Depending upon where you live and how “open” things are, that could be a long, long drive. Making a Taco Bar at home doesn’t require any of that. Okay, maybe pants would be nice, but not required.
