A Reason for Ice Cream

Did you know that today is National Vanilla Ice Cream Day? In my opinion, there are only two kinds of Vanilla Ice Cream worth eating – Vanilla Bean and French Vanilla. I remember as a kid we took turns cranking ice cream. If you didn’t crank, you didn’t get a scoop.

Jalapeno-Lime Glazed Drumstick

Are you having a wonderful Tijuana Tuesday? Gosh, I hope so. I also hope you are in the mood for some very sticky-spicy drumsticks. These were finger-licking good. You’re gonna need wipes, not napkins, with this chicken because the paper will stick to your fingertips.

Spicy Crescent Enchiladas

Some things are just so ingrained in American Cooking that we take them for granted, not realizing the rest of the world might not have the same convenience of commercially marketed short cuts. Rarely do we bake a cake from scratch, although the boxed variety often needs a helping hand. Pie crusts and Dinner Rolls can come in a box, from the freezer or even in a tube. Wow!

No Ordinary Grilled Chicken Fajita Foil Packs

The beauty of Grilled Foil Packs is that you can prep the pack early to cook later. Having company? Make the Fajita and Tortilla Packs in the morning, clean up the mess. Once guests arrive, toss the foil packs on the grill. By the time the first batch of Margaritas are ready, dinner is served.

Instant Pot Spicy Lime Chicken Tacos

I gotta tell you, every time I use my Instant Pot, I give Hubby a great big kiss. It’s Merry Christmas all over again. Meal prep is so fast. Don’t want fast? That’s okay, it has a slow cooker setting and a saute setting and a rice cooker and the list just goes on and on. I’ve heard tell the Yogurt Setting is perfect for proofing breads. That’s on my to-try list.

Bring on the Flavor of Arizona Day

When it rains, it pours. Or better yet, when there’s reason to Celebrate, there’s plenty to celebrate. It’s Father’s Day, and that’s a pretty big deal. But that’s not all today brings. It’s also Peaches-N-Cream Day, Day of the Gong, Go Skateboarding Day and Selfie Day just to name a few. Aside from Father’s Day, my favorite is that it’s also National Arizona Day.

Nacho Chicken Casserole

I don’t know about you, but I love the idea of casseroles. Everything you’ll want all piled in a single dish. Maybe add a side of salad or some warm rolls, and there you go – dinner in a snap. And just about anything can be transformed into a delicious casserole.

Another Taco Tuesday in Paradise

Over the course of our marriage, Hubby has introduced me to a lot of different things. One was an appreciation for Jimmy Buffet. One of the best concerts we’ve attended was a Jimmy Buffet show in Las Vegas.

Best Darn Taco-Margarita Bar in Town

Let’s start with mixing up our own Taco Seasoning, making our own Chorizo and then putting out a build-it-your-way Taco bar. Who needs restaurants to be open? A restaurant means you have to put on pants, get in the car and drive somewhere. Depending upon where you live and how “open” things are, that could be a long, long drive. Making a Taco Bar at home doesn’t require any of that. Okay, maybe pants would be nice, but not required.

Cheesy Chorizo Bites

Reality check – these are suppose to be appetizers. However; with all these days running together as they are; today is Tequila Tuesday. As long as we’re having cocktails; why not finger food for supper? I’m thinking serve with Beefy Taquitos and maybe a few Bean Dip Cups.

Velvety Queso Taco Pockets

We’ve talked about Hubby’s love for meaty pies. And his love for Mexican food. This awesome dish bring two of his favorites together. And I gotta say, Kiddo and I were right there with him. After all, it’s Tequila Tuesday, right?

Slow-Simmer Cilantro Chicken Tacos

Have I mentioned that I love – and I do mean L-O-V-E my Instant Pot. It just sits there, on a table in the corner of my kitchen, waiting to hum to life and bring us something delightfully delicious.  You can do everything from saute to bake to pressure cook or slow-cook. It’s a one-stop shop for so many things.

Green Chili Four Cheese Enchiladas

Happy Friday! For some of us, that means something – like the end of another grueling work-week. For others, Friday is just another in a long line of endless days. In our house, it means a meatless meal.

Celebrating Colorado Day

It’s that day again, National Colorado Day. Comes around every year on April 12. This year it just happens to take a back seat to Easter. Still, I did not want to overlook the 38th state of the Union.

Holy Wednesday Empanada Day

Each year on April 8, we celebrate National Empanada Day. The name Empanada comes from the Galicia, Portuguese and Spanish verb em pandar, which means to wrap or coat in bread. Empanadas are made by folding dough or bread around a seasoned filling. The Empanadas are then baked or fried, like savory hand pies.
