Fry Bread Tacos Chicken Style

Do you remember those delicious Green Chili Chicken Burritos we shared for Tijuana Tuesday? Great recipe, right? Just one tiny problem. Too much chicken.

A Chipotle Kissed Cinco de Mayo

Just as Saint Patrick’s Day brings out the Irish in all of us, Cinco de Mayo has a similar cultural effect. Instead of pints, we consume shots. Instead of Corned Beef, it’s tacos. Just as most of the newly born “Irish” of Saint Patty’s Day have no idea what they are celebrating, most think Cinco de Mayo is Mexico’s 4th of July.

Yummy Baked Quesadilla Triangles

It’s Tuesday – and for some that means Taco Tuesday. According to Wikipedia, Taco Tuesday is an American custom of going out to eat tacos. Seems restaurants offer special deals on their Tacos much the same way bars have Happy Hour. Taco Tuesday, according to Wikipedia, is especially popular in the beach cities of Southern California with Fish Taco Specials every Tuesday night.

Nil Sine Numine

Colorado’s state motto is Latin. What does it mean? It depends upon who you ask. Most say Nothing Without Providence, while others claim Nothing Without God. There is evidence that those who chose the motto meant Nothing Without the Deity, a general translation without a reference to a particular god. Now that could be a reference to Colorado’s Garden of the Gods with its beauty beyond compare.

Beefy Enchilada Cups

Today is National Curry Chicken Day and (oh yeah!) National Glazed Donut Day. So what do Beefy Enchilada Cups have to do with either of these National Days? Absolutely nothing. Not even in my wandering mind.

Our Lady of Guadalupe

Today is the Feast Day of Our Lady of Guadalupe. If we were in Mexico, nine days ago would have marked the first day of the Novena to Honor the Virgin of Guadalupe. We would have lit a candle each day for nine days, said prayers and sought intervention through our Blessed Mother that she may gain favor with her Son.

What Comforts You?

Once again, depending upon which National Calendar you wish to follow, today might just be National Comfort Food Day. On the Foodie scene, it’s also Sacher Torte Day and Rhubarb Vodka Day. The vodka makes sense since on December 5, 1933 Prohibition was repealed. That alone is reason to celebrate.

Not Another Taco Tuesday

Today is the first day of December. That means National Pie Day and Eat a Red Apple Day. It’s also Rosa Parks Day. Before we get into all the ins and outs of today, let’s just stop a moment to honor Rosa Parks. If ever there were an example of dignified courage, it is Rosa Parks.

Say Happy Birthday with Tamale Skillet Pie

On the National Day front, today is National Baklava Day. Personally, I think Baklava Day should be celebrated in December. It’s one of my favorite Holiday Baking projects every year, a tradition in our house. Today is also Homemade Bread Day. What is better on a cold day then the smell of bread baking? Yum!

Some Like It Hot

When I made this one-skillet supper for the first time, it was the week of our daughter’s Celebration of Life Gathering. As you can imagine, my thoughts were elsewhere. So rather than tinker around with a new recipe, I was on autopilot and followed the recipe to the T.

Bison Fry Bread Tacos

The first Saturday in November has been set aside to celebrate one of the most majestic beasts to roam the American landscape – the American Bison. These mighty animals have played key roles in cultural, economic and environmental issues throughout our history. Bison were central to the lives of Native peoples, a source of food and vital to religious ceremonies.

Friday Nights and Nacho Delights

Today is National Nachos Day, a day set aside to celebrate a Mexican Dish that has tantalized Americans since Ignacio “Nacho” Anaya first served them up to a group of Army wives in 1943. While I fully intend to make Nachos for my family tonight, we hardly need an excuse.

Stand Up Chicken Tacos

Welcome to Tuesday in my world. You know, Taco Tuesday or as we call it Tijuana Tuesday. Tuesdays are our night for all things Mexican. As it just so happens, tonight really is all about the tacos.

A Sizzling Soft Taco Day

Today is a special day – not just Taco Day, but Soft Taco Day. While those hard shells do bring a crunch to the table, in our house soft shell tacos rule.

Skillet Chicken with Cilantro-Lime Sauce

Today is Michaelmas, also known as the Feast of Saint Michael and All the Angels or simply Feast of the Archangels. Most of us recognize the Archangels Michael, Gabriel and Raphael. Catholics tradition teaches there are seven Archangels, one for each of the Seven Sacraments.
