Spicy Two Meat-Bean Tostadas

What is a tostada but Nachos on a giant tortilla chip? In our house, Nachos are awesome. We have nachos for game night, or just because we like eating with our fingers. So giant nachos with a pitcher of Margarita were perfect for a Tijuana Tuesday.

New Potatoes Béarnaise

Several life-times ago, Hubby and I frequented a restaurant called Brandiwines. It was a French-Country place with some of the most excellent foods on the planet. Some of my favorites were the Tournedos of Beef and their house specialty, Poached Pears in a wine sauce.

Char-Braised Basil Asparagus

I know, asparagus is so out of season right now. The stocks are fat and woody. Still, I love asparagus. It is my favorite green vegetable.

Mexican Rice Cups

When you are serving up some great Mexican dishes, what do you serve as a side? In our house, I must confess, it’s the usual suspects – refried beans and rice. I know, not very original. Every Mexican joint serves refried beans and rice. Just because it’s not original doesn’t mean ordinary.

Christmas Appetizers at the Farm

Let’s begin with a small disclaimer. My featured image is not a photograph of our beloved Family Farm. Dad’s pick-em-up is in much better shape, and the barn is a beautiful shade of red with a fairly new roof. I know because painting and re-roofing were family projects not that long ago. I just liked the country feel of the photo, so I thought it would be nice to share.

Third Sunday of Advent

Welcome to the Third Sunday of Advent. The third Candle is pink, a symbol of joy. It is also called the Shepherd’s Candle, for when the angels announced that the savior was born, the shepherds were filled with great joy. The faithful believers wait in joyful anticipation of the coming of the Lord.

Sweet Home Alabama Fried Chicken

Today is National Alabama Day. Alabama, the Heart of Dixie, was the 22nd state to join the union. She was home to the original capital of the Confederacy, Montgomery. Alabama set the stage for secession, and nearly 100 years later, set the stage for the Civil Rights Movement.

Buttery Sourdough English Muffins Smothered in Sausage Gravy

A while back I shared with you my Meat Lover’s Pizza. One of the ingredients was a half-pound of Jimmy Dean’s Regular Breakfast Sausage. That left me with a half a pound of sausage for another use. Now I know I could have tossed that other half-pound of sausage meat in the freezer. But I’ve got to tell you, I’ve tried that and a year later I’m tossing out the freezer-burnt sausage I forgot to use.

Ribbon Pasta with Shrimp and Lemon Garlic

Did you know that today is National String Popcorn Day? Yep, it is. I’ve always wanted to string popcorn and make cranberry garland for my tree. When my children were little, the best Christmas we ever had was filled with paper decorations and a cardboard box painted to look like a fireplace. How else was Santa going to get into our tiny apartment?

Saint Lucia’s Festival of Lights

Sweet Hawaiian BBQ Chicken Crescent Ring

Hawaiian barbecue in December? Sure, why not. I hear tell people like to go someplace warm for the Holiday. Although truth be told, I cannot imagine Christmas on a beach. But then again, I’ve never had a white Christmas either. Damp, wet, foggy and always cold – that’s my idea of Christmas.

Feast of Our Lady of Guadalupe

Today is the Feast Day of Our Lady of Guadalupe. She holds a special place in the religious life of Mexico and is one of the most popular religious devotions. Her image has played an important role as a National Symbol of Mexico. If we were in Mexico, December 3rd would have marked the start of the novenas to honor the Virgin of Guadalupe.

Garlicky Browned Butter Red Potatoes

Are you a ham or turkey Christmas Dinner family? Some people are both, some are neither. Growing up, it was always a ham for Easter and Christmas, with a great big turkey for Thanksgiving. Its’ strange, I can remember the ham, and some of the side dishes, but not the vegetable. I could be mistaken, but knowing my Dad’s Okie roots, I’d be willing to bet the ham was served with mashed potatoes and red-eye gravy.

The Little Country of San Marino and Slow-Cooked Steak

A few years back, I went in search of recipes from around the world. I wanted to expand our “Travel through Dining” horizons. It was then that I discovered San Marino, a tiny country within a country that has existed for nearly two thousand years.
